		<description>Joy, love your site, I too have been bitten by the natural yeasties! I started mine w flour/water &amp; wild local grapes (obsessive, who me?) I feel as if I had read everything about SD but it was very discouraging until I finally accepted that one must be brutal and rigorous in the first 10 days or so. Discarding &amp; feeding this little world as it grows in strength. I&#039;ve been making a loaf a week and every week it gets better and better. Probably time to freeze some starter.

I think I break all the rules, I use a metal spoon, I&#039;m less than scientific about when/how much I feed, it suffers from benign neglect. But I&#039;ve been making either pancakes or waffles every week for years and years, and my family REFUSES to eat pancakes when we go out for breakfast, which means I think i&#039;m doing something right.</description>

I use a mixture of white, wheat and oatmeal (5 min cook type).  The oatmeal is dissolved by morning.  If you make pancakes a lot you can mix all the dry ingredients in a sealed container and scoop it out in the sleepy morning. (Mine has dry milk making it even easier.) 

I can&#039;t wait to experiment with this recipe.  Brown sugar is a good idea.  Keep the sourdough recipes coming!</description>
