These were really easy to make, I followed the recipe except for fresh ginger instead of ground. It's a mix between gingerbread and molasses cookies! real quick to put together, and the dough is easy to mix. I made a batch (21 cookies) to send to my mom for her birthday in a nice tin box - my BF was sorry there weren't more that didn't fit in the box, lol!

These have to be my all time favorite holiday cookie. I swear by Lee Bailey's recipe for Molasses Cookies, from his cookbook "Country Desserts" (a fantastic old school cookbook). His secret to a good Molasses cookie, balck pepper. It gives the cookies a little kick of spice. Soooo good!

These are so incredibly perfect. My favorite kind of cookie when I was a kid. Oddly enough, we didn't have any ground ginger on hand when I wanted to make them, but we had fresh. The reverse is usually the case in our house. So we used about one tablespoon of fresh grated ginger to one teaspoon of dried ground, accordingly to conversions we found online. Worked great. They came out so beautifully light and fluffy but with the crunch of the sugar. I am already certain that we did not make enough and they will all be gone by sundown.
