I'm travelling Christmas eve and wanted to make and freeze this the weekend before and let it thaw during the nine hour drive home Christmas eve then consume at Christmas brunch. The only problem I have is that, apparently, I can't measure to save my life and I put it in a too-small pan. It rose up and baked all over the pan, but it looked rather pretty - kind of like a cascade of cranberry cake over the side. I cut it off so it wouldn't over bake and feasted on it right away. I differed from yours slightly because I omitted the nuts (don't like 'em), and I do think next time I'd put some orange zest in it just because I love those flavours together.
