S'mores Brownies

Everyone has their own way of enjoying toasted marshmallows.  It’s very much a personal thing… this I understand.

I like my roasted, toasted marshmallows extra crispy… extra well done.  I want that sucker on  the end of the misshapen close hanger, stuck right into the depths of the fire.  I want it to come out flaming.  That’s right, I’m a marshmallow torch girl.

Apparantely, the marshmallow torch is not how you make friends at all-girl sleep away camp.  I would always get groans of disapproval from the girls that were trying to keep their precious marshmallows just far enough away from the orange coals to perfectly toast them.  Maybe they were less than thrilled with my marshmallow torch because I usually managed to set at least one of their darling marshmallows on fire just out of sheer proximity.  I considered it a favor.  Them..?  Not so much.

But these brownies aren’t really about my summer camp misadventures, are they?  These S’mores Brownies are more about fudgy, dense chocolate that bakes up with graham cracker bits and toasted marshmallows.  Toasted, not torched.

There are few things quite as spectacular as a pan of warm brownies just about 15 minutes out of the oven.  With their  slightly crackled top and perfectly chewy  chocolate center, brownies are a simple pleasure.  These S’mores Brownies are  simply an improvement on something that didn’t really need much fussing with.  The result is a marshmallow topped brownie that’s so good, you might find ways to rationalize a big hunk for breakfast.  Chocolate can be breakfast too.  Life is entirely too short not to make a S’mores Brownie breakfast from time to time.

Print this recipe!

  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter
  • 6 ounces unsweetened chocolate, chopped
  • 5 large eggs
  • 1 1/4 cups dark brown sugar
  • 1 cup granulated sugar
  • 2 teaspoons vanilla
  • 1 cup graham cracker, roughly crushed with your hands
  • 12 big marshmallows  (I also diced 6 additional marshmallows and stirred them into the batter. These marshmallows dissolve when baked, so you can leave them out, or throw them in.  Up to you!)

Preheat oven to 350°F. Butter 9×13-inch baking pan with 2-inch-high sides. Combine first 3 ingredients in small bowl. Stir butter and chocolate in a medium sized bowl over a  heavy  saucepan of simmering water.  Stir chocolate and butter in this double boiler until melted and smooth.

Beat eggs, sugar and vanilla in large bowl to blend. Stir in warm chocolate mixture, then dry ingredients. Fold in graham crackers.  Pour batter into prepared pan. Dot with 12 large marshmallows.  Bake until toothpick inserted into center comes out with moist crumbs attached, about 30- 40 minutes minutes.

Marshmallows will be browned and puffy but will deflate as the brownies cool.  Cool for at least 20 minutes than slice with a sharp knife, cleaning the knife with hot water if it gets too messy and sticky.  Serve or wrap individually in wax paper for storing.

These brownies are the bomb! I took them camping and they were such a hit. We usually do the traditional S’mores…but these totally rocked, and less mess!! Thanks so much for sharing.

Your blog is my go-to site, to indulge my inner domestic goddess after every day at the salt mines of corporate life!

My kids just fell in love with the s’mores cake at a local bakery chain, but I’m betting these brownies will take the cake, so to speak!

these were to-die-for delish! i just used a box mix [Betty Crocker with the pouch of Hersheys syrup] with the graham crackers and marshmallows added and they disappeared faster than free money! (because, of course, some people might be a little skeptical of free money but NOBODY is skeptical of free BrOwNiEs!!!)

I didn’t have the energy to go buy some unsweetend chocolate last night so I used semi sweet chocolate chips and they still turned out so awesomely yummy. Also I just melted the butter and chocolate chips together in a saucepan.

Hey Joy – I’m just wondering – I have these in the oven at the moment and they’ve been in for 40 minutes but they are still too wet inside, I’m going to leave them in for another while and hopefully that will work. I just wanted to check if anyone else had this issue? I’m using a fan oven at 170 Degrees celcius :)

This didn’t work for me at all: after being in the oven for over an hour, the edges were dry & overcooked, the centre was still wet & the marshmallows were burned, but not in the pleasant way. Sigh.

Yum. The overall effect was delicious and the basic brownie part of this recipe has forever trumped all other brownie recipes I had in my book. These are incredible. I’ve always been a gooey-not-cakey brownie girl, but I’ve converted. Baked the right amount of time, the edges are a little cakey, but still moist and rich and the centers are totally fudgy and delicious. Mmmmm.

To those whose batters came out funny, it may have been the chocolate you used. Good chocolate makes all the difference in the world.

Joy, I am with you on the really well cooked marshmallows. There is something very satisfying about seeing one catch on fire and then blowing the flame out. I love the crunch topping afterwards. I have a 91 year old aunt who loves to eat stale marshmallows. She keeps them forever before tucking in. I have no idea why. She also taught me to put butter on my bread before making a peanut butter sandwich. So good. Would like to make these brownies very soon.

This is probably the most amazing brownie recipe I’ve had in my life – I’ve never tried making them from scratch, but I must admit that I’m officially converted. I will never again do a box mix. I am gong t a tournament tomorrow and I am baking your brownies for the baking contest….I hope they come out well!!! I made them last wk., they weren’t the homemade recipe, though, and everyone in my school who had soem thought they were delicious!!! Hopefully I win with this recipe!!

I made these today for a cook-out (1st of the year) and they were a HUGE hit!!!! OMYumminess soooooooo GOOD!!! I do think I baked them about 3 minutes too long though – next time I will only bake them for 35 minutes rather than closer to 40. Thank you Joy for this recipe :-)

I made these today and I didn’t love them. I baked them for 36 minutes and they came out pretty dry. I think that even if I had taken them out sooner they would have been cakier than I prefer. Also, I didn’t think the graham crackers really added anything–they were barely detectable.

Joy, I made these using your Old School Fudge Brownies batter and I tossed some Hershey’s chocolate on top…the results were AMAZING! Tasted just like a warm s’more. I also waited 15 minutes into baking time before topping with the marshmallows so that they would be gooey and it worked perfectly – browned but soft inside. Really lovely. Thanks so much!

If I used mini marshmallows instead of the jumbo ones would you suggest that I still put them in the beginning or should I wait and top the brownies like 10 mins before they’re done? Perhaps, covered?

I didn’t work for me either. I placed it in the oven for about an hour too because the brownie didn’t seem cooked by 40mins! The inside was still wet and gooey and yes the marsh mellows are burnt. It was also too cakey and airy for my liking instead of fudgy. I think the next time i will not use the baking powder.
