Raspberry Lemonade

When it comes time for a little human to call me Mom, there are several things I hope for.  Here are a few of those hopes:

I hope that I’ll no longer run screaming from the room at the sight of a spider.  Mom has to take care of the spider… that’s sort of part of the deal as Mom, right?  Maybe can I always get away with saying, “Let’s go get Daddy to take care of that spider.”  I hope that works.

I hope that a deep affection for pickles and pancakes, though not necessarily on the same plate, is hereditary.

I hope that I have as good a pair of Mom Hands as my mom.

Most importantly, I hope that I create as patient and loving, supportive and hilarious a family as was provided for me.

Happy Mother’s Day to all of you who have the patience and care to raise new, happy, and lovely people in the world.

Here’s some dreamy Raspberry Lemonade, and all sort sof recipes that you might consider making for your mom and family this weekend.

Raspberry Lemonade

Raspberry Lemonade

This gorgeous Raspberry Lemonade is absolutely the perfect drink to have chilled in the refrigerator all summer long.  Consider it The Real Deal Pink Lemonade.  An absolute dream, and worth the two easy steps it takes to make.  You’ll have enough raspberry sauce to add to the lemonade, swirl into ice cream, and  drizzle on top of Milk Chocolate Pudding.  Super yum!

Summer Sweet Raspberry Lemonade

adapted from Simply Recipes

Print this recipe!

1 cup sugar, for a less sweet lemonade, take the sugar down to 3/4 cup

1 cup water to make the simple syrup

1 cup fresh lemon juice

4 cups cold water

2 Tablespoons to 1/4 cup raspberry sauce, depending on how much raspberry you like

Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.

While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.

Add the juice and the sugar water to a pitcher. Add  4 cups of cold water, more or less to the desired strength.  Add the prepared raspberry sauce and stir to combine.  Refrigerate 30 to 40 minutes. If the lemonade is a little sweet for your taste, add a little more straight lemon juice to it.

Serve over ice.

Serves 6.

Raspberry Lemonade

Easy Raspberry Sauce

1/2 of a 12-ounce bag frozen raspberries, thawed

1 tablespoons sugar

1 tablespoons water

Place the thawed raspberries in the bowl of a food processor fitted with a blade attachment.  Add sugar and water and mix until the raspberries form a smooth puree.  Transfer raspberry puree to a fine mesh strainer fit over a bowl.  Press the puree through the strainer, until only the raspberry seeds and a bit of pulp remain the the strainer, and a beautiful raspberry sauce is all that’s in the bowl.

Raspberry Lemonade

Adaption:

Prosecco Raspberry Lemonade: Fill a glass with ice cubes.  Fill the glass half full with raspberry lemonade and top with Prosecco or Champagne.  Garnish with fresh basil or mint leaves.  Hey! Hey! Cocktail!

    I love the cocktail twist on the raspberry lemonade. That sounds perfect for a celebratory brunch. My mom is going to be far away on Mother’s Day but we could each make this and toast across the miles! Your lemon souffle pudding is calling my name too…

    Oh, isn’t raspberry lemonade just JOY? I don’t have the time to do homemade b/c I have five or six things to bake, but I’m having a party tomorrow since I’m moving this summer and want to say goodbye to everyone, and I will definitely be having some raspberry lemonade (the Minute Maid kind) on hand. Another thing I definitely recommend for this time of year? Coconut cream pie. I’m on my way to pick up half ‘n’ half now ;-)

    sounds great like everything on your site – may i ask your thoughts on substituting sugar syrup with MAPLE SYRUP? I make my children a very quick lemonade with equal parts fresh lemon juice & maple syrup & add water & they slurp it up! raspberries are a fab addition though

    I love your blog. It has been a great discovery for me. I love baking, and sometimes I would like to live there (where you are), because we have some difficulties finding raspberries and other delicious things such as: Syrups, these gorgeous chocolates you use, cranberries, icings and…..things I go crazy buying when I found an English shop here.
    When I travel I come back home full of food on my suitcase;-) my husband and my family are going crazy with my “hobby”…….

    i just made this and it is perfect! love the raspberry puree- i’ve always cooked the berries to make something similar but this was easy and delightful. even my anti-lemon daughter loves it.

    It’s me again… Just wanted to let you know that I used your recipe with a scant cup of lime juice instead of lemon and it is to die for. Seriously, the raspberry and the lime is fabulous. Try it, if you haven’t already!

    This looks so fresh and simple

    I would even be inclined to add ice to this and whip it into a smoothie.
