The pancakes look awesome! I noticed you mentioned your dad makes the best sweet potato pie. I'm wondering if you could share the recipe. I now it isn't really sweet potato pie season yet, but it's my boyfriend's favorite and I would love to try to make it! Thanks - love your blog!

Ok. Another one of your Dad's recipes is now a staple in my book. I just made these pancakes this morning and they were the best I have ever put in my mouth!!! Normally I do the wheat flour, bran and pecan thing in my pancakes, which are still wonderful. But this morning, after a long week of grad school, I wanted something classic, really yummy and not necessarily good for me. These were perfect. The 1 stick of butter was PERFECT! These are going in the recipe book on the page that is pretty much always open!!! Thanks for sharing your memories!! Send my thanks to your Dad, again!!

a STICK of butter??!! Wow, that's a lot, in addition to the oil. I'll have to give these a whirl - I've been having trouble getting my "light and fluffy" pancakes to STAY light and fluffy - they seem to collapse immediately upon entering the 200F oven where they are intended to stay warm while I finish cooking the rest.

Your Dad's kitchen looks awesome. No wonder he loves to cook in it. Hope you made him coffee to go with his pancakes.
