Lemon Rosemary Palmiers

Let’s play a game called What’s on Your Nightstand?. What? Too personal? Oooh come on! We’re all friends here. Let’s try to figure out what our night stands say about the state of our lives.
On my night stand is:
1 Ikea lamp.
A water color painting made by my aunt in the 80’s.
A cup of what once was hot lemon water with honey, now just a mass of lemon seeds at the bottom of a mug.
A glass bowl with a ring and a business card for a French bed and breakfast.
Two books: Unaccustomed Earth and Seize the Day.
My credit card, and a small bowl with cookie crumbs in it… Lemon Rosemary Palmier cookie crumbs.
What might my night stand contents say about me? I love a home furnishing bargain. When I run out of tea I make do with lemons. I can’t sleep in jewelry and I like to daydream about vacationing in the French countryside. I either read a book or go internet shopping before I fall asleep, and I eat cookies in bed. All things considered, it seems like a pretty cushy and self indulgent life…. plus, cookies!
I’ve taught you how to make Palmiers. Have you made them yet? It’s amazing how easy they are. The only trick is to get the right store-bought puff pastry. Make sure to buy an all butter puff pastry like Dufour. Puff pastries that aren’t made with all butter are liable to have all sorts of mystery fat in them. Ick.
These Palmiers are flavored with lemon zest and fresh rosemary. They’re delicate and sophisticated but delicious enough to munch on in bed on a Saturday night.
Lemon Rosemary Palmiers
1 package puff pastry
1 scant cup of sugar
zest of 1 large lemon or 2 small lemons
1 teaspoon finely chopped fresh rosemary
Preheat the oven to 400 degrees F. Finely chop fresh rosemary and set aside. Measure out one cup of granulated sugar (it doesn’t have to be exact). On a clean, flat surface rub lemon zest into the sugar using a bench knife or the back of a spoon. The sugar will become fragrant as the zest is rubbed into it. Sprinkle about half of the lemon sugar onto a clean work surface. Unfold the thawed puff pastry onto the sugared surface and sprinkle the top of the pastry with the remaining lemon sugar.
The Dufour Puff Pastry unfolds out of the package just about the length and width you’re looking for. You’ll just need to roll it to thin it a bit, extending it about 1/2 to 1-inch on all sides.
What’s that? You have a little rip on the seam of your puff pastry!? Me too. Maybe just try to patch that up a bit. But really? It’s not that big a deal. Don’t sweat it!
Sprinkle the surface with fresh rosemary.
Your puff pastry should be roughly 8(to10)x12-inches in size. Now start rolling. Roll up the left vertical side towards the center seam. Roll the right vertical side towards the center too.
Gently press together. Wrap in plastic wrap and refrigerate for an hour, or until cold and firm.
Remove dough from the fridge and slice in 1/2-inch slices. Place on lined baking sheet. Bake in 400 degree F oven for 10 to 15 minutes of until golden brown. You may want to rotate the baking sheet halfway through baking. Keep a close eye on the cookies after about 11 minutes. They might burn quickly.
If using just a greased and floured baking pan instead of a parchment or silicone lined pan, remove the cookies from the pan immediately after they come out of the oven. If you’ve lined you baking sheet, you’re fine to let the cookies cool on the sheet.

What fun! Palmiers look delish…
On the nightstand: alarm clock, silk scarf (as tablecloth), stack of Peter Pauper Press books from 50’s & 60’s (they are v. cute w/ woodblock illustrations, I collect them), Burt’s Bees lipbalm, assorted jewelry, incense burner, three unmatched glass candle holders w/ tealights, deer pen from Seoul, eggplant-shaped wooden box from Thailand, one button and one tacky ring I found on the sidewalk, empty water glass.
They are beautiful. I stopped making my own puff pastry when I found Durfour. Much easier and more pleasant.
On my nightstand. A bottle of white grape juice, a phone, a lamp, a framed crayon drawing(from my daughter), a picture of my daughter, my reading glasses, and two books; walking in circles before lying down and Silent Tears. That was fun. Kind of like peeking in someone’s medicine chest!
I give! I must make at least one version of the palmiers, which I have been eyeing for awhile now. on my nightstand are scarily large stacks of books, a box of tissues, and an alarm clock. and a small heating pad ( the kind with lavander in it that you heat in the microwave).

on my IKEA nightstand i’ve got a lamp from Walmart, a small oak box with open top that holds a ceramic angel and a ceramic bunny, a framed photo of my boyfriend and i, my pesky alarm clock, a wooden coaster and a glass of water.
clearly my nightstand is dreaming of cookies…. and i really shouldn’t disappoint it.

the reader’s digest, country living, marthastewart living, a catalog for wild flowers, a clock radio, lamp, a picture of me and my daughter dancing in the kitchen(from her)—the drawer has pictures drawn by her.
Daamn I don’t have a nightstand! I pile stuff on the floor by my bed..a book, my iPod, water bottle (which doesnt have a lid and falls over and leaks..
) a cushion and bag of birthay presents! Hey, I’m sure the lack of nightstand wouldnt stop me from eating delicious cookies such as these in bed! Yummy!
You’re so lucky to have a cooking area with so much space to spread sugar and dough. Wish we had all of that roooom!

I was just wondering what to bring to a picnic. These sound perfect. My night stand has a bird-shaped lamp (I love it), a small jewellery box, my phone charger, and that’s about all that fits! I need to get a bigger night stand.
There you go, boosting even more my love for citrus.

These are delicious! Puff pastry is on the buy list amount with few other things! This looks incredible!!! Whats on my night stand? Night light – cell phone hooked to the charger and folded day cloths. Thats it nothing more! Why because I’m to much of a neat freak! LOL…great post!

the restaurant where i did my externship had mini palmiers as petit fours made with simple syrup and cardamom, soooo good and simple. because they were mini, they unfurled really unattractively so we alternated them, one right side up, one upside down, and then sandwiched them btw two sheet pans. they behaved after that.

God that sounds delicous!
How exciting, I can hardly wait to try these. I teach a highschool baking class (Canadians still teach home ec) and this is something they would love! As for my night stand…I have a 7 foot bookcase; alarm clock, tea bag from last nights tea, kokui oil, tivo remote, vitamins, a chocolate wrapper and the phone – off the charger of course.
I can’t believe I’ve never made these with puff pastry before! I always make them by hand (not super flaky, but good, more like pie crust)… the rosemary addition sounds lovely!

These are now on my to-bake list. Thanks Joy! I’ve never thought to make palmiers before, but you make it look super easy. Also fun reading about everyone’s night stands. I have a teeny (no drawers) nightstand from Ikea but I still manage to fit the following on it: adorable Target lamp; little jewelry box with two drawers filled with a lighter, matches, a notepad, & eye mask; two tubes of mostly used lotion; a flashlight; three pens; my alarm clock; yummy violet-scented candle; a votive holder filled with burnt matches; and a warming can of root beer. Cookies would be better!

On my nightstand. It isn’t a nightstand but a carved Sri Lankan three legged table (you can disassemble it), a small blue and white lamp that was a wedding present, a tiny alarm clock, my Body Shop foot roller. NO room for books; they are stacked next to the night table: Jewels by Victoria Finlayson, Animal Vegetable Miracle by Barbara Kingsolver and Round Ireland in Low Gear by Eric Newby. Must locate good Canadian puff pastry before attempting those lovely palmiers!
I don’t have a nightstand (yet). We moved into our house about 2 1/2 years ago and still have yet to decorate our bedroom, and since I don’t want to buy any furniture until I know how I want the room decorated, I’m left with a bunch of crap by my bed but no nightstand!
I will tell you, however what’s on my carpet next to my bed and on my dresser, which I guess is the closest thing…

My nightstand consists of 1 very boring ikea lamp decorated with floral corsages (they just clip on) some magazines, a steven brust book, a jewlery box my late grandmother gave me for my 21st birthday, a turquoise blue hat from the 50’s & matching gloves, a notebook & pencil to write things I think of in the night & my ipod charger

hey! my nightstand has an ikea lamp (i see there’s a whole group!) 3 candles, a bottle of water, a box of tissues, a pen, my journal and whatever book i’m reading (currently it’s Betty Friedan’s “The Feminine Mystique”- amazing!)
These look delicious! Lemon and rosemary are a great combo. My nightstand has a photo of San Marco Square, a target lamp, my cell phone, Ina Garten’s book Back to Basics and Fresh’s sugar lemon body lotion.

my nightstand has: lip balm and some l’occitane hand creme. That’s it!

As for the nightstand …its a mess:
– a 40+ year old lamp that was left at the huose when I moved in (formely my grandparents house)
– The Reapers by John Connolly
– plastic glass 1/2 full of water
– a small bowl filled with recently worn jewlery
– tissues
– a photo of my two cousins and me from from when we were kids (also left at the house)
– alarm clock that refuses to keep the correct time, so I never really know what time i’ll wake up
- finally, some cortizone because I was attacked by bugs while mowing the lawn on Sunday
not sure what all this says about me other than i need a new alarm clock and maybe some stuff that wasn’t left at our house.
Not personal at all… in fact, I’m very boring – but messy as hell!

These cookies are fantastic! I tried making them, only sprinkling loose-leaf chai tea instead of lemon and rosemary. It was pretty good! But I still think that the lemon-rosemary was better! Mmmm!
As for my night stand, it is a mess! It’s got a cute little round lamp, a cup of tea from last night, a contacts case, several pens, the cookbook that I am working on writing, my credit card (I shop in bed, too) and a printout of your recipe for these cookies!
This Saturday, August 22 is my Birthday!!! Yeah!! I’ll be 51!! Those palmiers look tasty! I make a nummy Lemon Rosemary Sugar Cookie that’s to die for!!
I don’t have a nightstand, as I’m sorta homeless right now, living in a friend’s basement since I was laid off from my chef/cook job. But, in leiu of that, I have my Ipod, phone & several library books sitting next to the mattress I sleep on down here!!

Joy, these look lovely. I actually just made my own puff pastry. Six hours and counting it took! I think these are just the ticket for some of the little pieces that I have left – after my Tarte Tatin and Mille Feuille! But lemon and rosemary? In a sweet? How divine!

These look fantastic! Veganism means we’re stuck to puff pastry with the all sorts of mystery fats in, sad times! But nonetheless I can’t wait to make these, currently I have a fetish for all things coconut and cardamom so might switch the lemon and rosemary for those in a second batch! Mystery fats agogo!
