Weekend Waffles with Maple Black Pepper Bacon

Weekend Waffles with Maple Black Pepper Bacon

I’m going to need you to do a little something for me this weekend.

Yes.  It’s Wednesday.  We’re planning ahead.  This is important.

I think you and I should make it a point to seriously relax this coming weekend.  See… it might be our last chance to really take it easy before the new year.  Before we know it we’ll be swept away by Thanksgiving, festive flavored lattes, contemporary holiday music, visiting relatives, cranberry cocktails and company parties.

This weekend though… this weekend we can take it easy.

To help us with our plan, I’ve come up with the perfect weekend breakfast:  yeast risen waffles with maple and black pepper bacon.

We’re taking it slow this weekend.  Are you in?

**But wait!  You don’t have a  waffle iron?  It’s ok.  These Milk Chocolate Chip Buttermilk Pancakes with a side of Maple Black Pepper Bacon should put  you in an equally great food coma.  Not to worry.

Yeast risen, overnight waffles are pretty stellar.

Make the batter Saturday afternoon, let it rise on the counter for an hours or so.  Cover and refrigerate until you’re ready for breakfast on Sunday morning.

On Sunday I stirred my batter a bit and let it to rest on the counter for an hour to come to room temperature and rise a bit.

The batter will be goopy, but don’t let that deter you.  These beauties bake up crisp and full of yeasty, maple sugar, nutty flavor.  Adding white whole wheat flour adds a touch of nuttiness to compliment the brown butter.  Yes… these waffles are full of character.

Don’t even get me started on the bacon.  It sweet and spicy and… bacon.  It’s inherently perfect.

Weekend Waffles with Maple Black Pepper Bacon

Weekend Waffles

     adapted from King Arthur

makes 2 big square (four sectioned) waffles, enough for 2 and a half people.

     Print this Recipe!

1 1/2 cups whole milk

7 Tablespoons unsalted butter, melted until browned bits appear

3 Tablespoons maple syrup (the real stuff or simply use brown sugar)

3/4 teaspoon salt

1 teaspoon vanilla extract

2 eggs

1 cup all-purpose flour

1 cup white whole wheat flour

1 1/2 teaspoons instant yeast

Heat the milk until it is hot but not boiling.  Place it in a large bowl (you’ll need the room for expansion) and mix in the browned butter, maple syrup (or brown sugar) salt and vanilla extract.  Stir until the mixture has cooled to lukewarm.  Add the eggs, flour, salt and yeast and stir all together.  If there are a few lumps, that’s fine!

Cover mixture with plastic wrap and a clean kitchen towel and leave to rise for 1 to 1 1/2 hours.  The mixture will begin to bubble.

You can cook the waffles at this point, or place the batter in the refrigerator to rest and develop flavor overnight.

Remove the batter from the fridge about an hour before you’d like to eat breakfast.  Stir the batter and let it come to room temperature.  When ready to cook, preheat the waffle iron and spray with nonstick cooking spray.  Add 1 1/2 cups of batter (depending on the size of your waffle iron) and cook until golden brown.

Top with butter and syrup and anything good.

this couldn’t be easier!  thanks for the recipe Rachel!

as much bacon as you’d like

maple syrup (the real stuff)

black pepper

Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper or foil.  Place bacon strips on sheet, close but not overlapping.  Drizzle with maple syrup, about 2 or 3 Tablespoons per 10 bacon strips.  Sprinkle with as much black pepper as you like. Bake for 10 minutes then remove pan from the oven and carefully flip bacon strips over.  Bake for another 5 to 10 minutes or until the bacon reaches your happy point of doneness.

The pepper bacon totally makes it. I’m still dying to try your waffles with bacon IN them!

Am I missing something (sorry if I am) – I don’t see the addition of the eggs in your instructions. For other make-ahead waffles the eggs are added just before you bake them. Is this the same for this recipe?

joythebaker November 18, 2009 at 7:37 am

i’ve seen waffles recipes with yeast where you add the eggs just before baking… with these you add them along with the flour, salt and yeast. A little strange, but it works out!

Note to self: Take it easy this weekend (per Joy), prepare waffle batter on Saturday, on Sunday make black pepper bacon and delegate waffle making to son.

This is the perfect plan…. well done.

I’ve never made yeast-risen waffles, but I just might have to after reading this post! I love the idea of prepping the batter the day before cooking them.

These look gorgeous! I’ve never had bacon with pancakes/waffles (yes, shocking I know!) but your post might have just convinced me to do so. :P

What a great idea to relax with waffles this weekend. After a busy week of four interviews for three different jobs I’ll need it! But I also promised to help my parents paint their living room. Waffles will have to save me.

Yes! I love how you cooked the bacon and I bet it smelled so delicious. The ingredients are things I always have on hand.

My neighbor cooks stinky sausage every weekend, 10am on the dot. This weekend my apartment is going to smell like maple bacon and better than his! It’s on!

I think this recipe was made for me! I have one unchristened waffle iron….. a love of bacon, (especially when it’s combined with maple syrup) and an URGE to make these that comes from somewhere deep deep deep down inside.

That looks a lot like my great uncle’s recipe… takes me back to early mornings before huge family gatherings on the holidays! :) Perfect.

Waffles are my familys favorite for breakfast. I bought my waffle iron and made them for breakfast on a very regular basis. It broke 6 mo. I need a new one. :(

Reply

Renee November 18, 2009 at 3:28 pm

Yes, I think I will make these. Thank you Joy for giving me the permission to eat bacon this weekend.

After being burned yet again by making bacon in a skillet, I put it in the oven! Comes out even crispier than I would have imagined, and I have a metal cooling rack that makes it easy to cook off all the fat. I may have to try this and the pancakes this weekend!

Can I just go ahead and agree with everyone else? I love the fact that you have blue nail polish on!

And I didn’t even consider it before, but you’re so right. This is the last real weekend to relax and take things slow before the frenzy begins. I will certainly join you in this task. Saturday will start with a low-key fondue night with friends. :)

I want to try this recipe this weekend but eating half a stick of butter per waffle is deterring me. Any suggestions on how to cut down the butter?

A lot of people don’t understand; the best way to cook bacon is in the oven!!!!! It turns out soooooooooooo much better. Another equally awesome twist is McCormick’s Sweet Smoky pepper blend with brown sugar.

My family & I just finished our brunch of Weekend Waffles with Maple Black Pepper Bacon. It was a hit! We usually have pancakes or toutons on Sundays but now I’m going to add these waffles to the rotation. They’re super. Thanks for the recipes!

Hey Joy, looks like Dad and I missed out being away when you were making the waffles and bacon at our house. They sure did look delicious. Dad got a little teary-eyed reading your blog and remarks about the sweet potato pie. I can sure vouch for you on the process he took to finally get this great recipe. I just wonder how many sweet potato pies we have eaten? Love ,Mom
