What? I wore my big ghetto hoop earrings! I made a big ol’ mess! You don’t remember?
Fine… lucky for you, Jill and I made a video of the whole extravaganza.
That’s right. It’s Bake Out time again.

I’m glad I’m already baking tomorrow with my niece or this post would have made me go out and buy materials tonight to bake!
I’m going on vacation next week but when I get back I think I’ll have to put a pie on my list.

I advice you to use fork to mix the butter and flour :) That`s faster way and you`ll have really clean hands! :)

AH dorable!! Joy, thanks for the pie crust encouragement. It really is all about playing with food isn’t it? I’m still scared. And every time I attempt pie dough I say I’ll never do it again. Not because it’s bad, just doesn’t turn out great… but I’m going to try it again and a again and, with your help, I’m sure I’ll be able to throw down a killer krust some day… hopefully soon! I’ve got fresh peaches and blueberries from my local market. Maybe I’ll make a double crusted pie with ‘em!
Oh! Question! When is it appropriate to par bake the bottom crust? Is it more important to place pie on a lower rack in the oven? I always fear a soggy bottom… cuz it’s happened. I don’t know, really, I’m not insecure in the kitchen or even baking, just, when it comes to pies, they seem a little more mysterious. But I LOVE pie! More than cake or cookies! So it’s real important I get over this insecurity!

Can I make a pie crust without shortening? I read that it’s even unhealthier than butter (which, for me, is THE line).
Sure! Use all butter if you’d like!

As someone who lacks a food processor, thank you, thank you, thank you for this! I’ve only ever made pie dough with an appliance (when at my parents’ house), so it’s really nice to see how easy it is sans processor.
Now I just have to get the oven fixed and we’re in business…

My mom and I made a double-crust pie today! I wanted to wait until she visited to help me through it. Double crusts are intimidating for some reason… but thanks to moms and to yous they are so very possible!

Anyway, I was basically wondering about cutting vs. grating butter. Can you do either for this crust, or is it better to cut for this so it stays colder longer (and better to grate for the no roll crust because it’s easier to incorporate)? Also, I <3 your videos with Jill!

Such a cute video and oh my the deliciousness! My grandma, who is now 95, taught me to roll the crust onto the rolling pin and then unroll it back onto the pie pan for easy transferring from countertop. Same goes for the top crust just roll into the pin then unroll it back onto the top of the filling–makes it less stressful than trying to lift it with your hands. But I must say you did a fabulous job. Thanks for sharing your love of food with all of us.

Until I started reading your blog (I stumbled upon the Avocado Chocolate cake) I was always afraid of baking, but your awesome recipes and honest writing inspired me to give it a try, and now I’m a baking fiend…
Yay!! Another Bake Out video! This pie looks amazing – I love the idea of using cinnamon graham crackers to keep the bottom from getting soggy. Brilliant! :-)

I’ve been pie-making for the past month, learning how to make the flakiest pie crust from grating butter to smudging cubes of butter with my palm. Is it worse in tropical weather to ensure the butter doesn’t melt? I tried the palm smudging technique last Sat. the dough turned mushy and all but I refrigerated it overnight, patched it over the pie dish and the crust turned out amazingly flaky. But I hated the messy gloppy dough part. I’ll try this rolling pin method tonight and see if it works.
BTW, can I fill the pie with filling, leave it in the fridge overnight before baking it the next morning? Will that, like, ruin the pie bottom?

I love the method with the rolling pin, it looks like the key to success! I am thinking about trying to make my own cooking video too! Yours is so wonderful! Keep up the delicious cooking :)
Hi Joy, I loved the video! I have a question though about fruit pie filling in general. I’m always worried there will be too much juice from the fruit.. is there a good rule of thumb about a ratio of flour to fruit? or does the ratio depend on what type of fruit? I’m always worried about adding too much flour but then I’m sometimes concerned it won’t be enough flour and it will run all over the place. I do like the idea of graham cracker crumbs though.. so I’ll try that again too. Thanks so much for your awesome recipes and videos.. I can’t wait to try this pie recipe this weekend!! :)
i always make my own pie crust, and I’m always looking for the perfect recipe to make the perfect, flakiest, most melt-in-you-mouth pie-crust… and this may just be it! It was a though the pie crust was a croissant, stuffed with filling! I did have to add a little bit of water though (only about 1 TBSP per dough-ball), because it wasn’t really holding together (only about 1 TBSP per dough-ball). Thanks!

oh my goodness thank you for this. i wish i could upload i picture of my gorgeous pie made from this recipe/tutorial! i’ve never successfully rolled a flaky pie crust, but actually managed with this method! i love it! your recipes always work out the best for me – they’re winners everytime. you’re a star.
