<p>Let&#8217;s talk about keeping it classy.  Hot dang! I try hard to keep it classy.  Holy smokes&#8230; do I ever fail sometimes.</p>
<p>Let&#8217;s discuss classy versus not classy, and what the heck chocolate dipped bananas have to do with anything.</p>
<p>Classy:  a tastefully short summer sundress.  Not class:  booty shorts that awkwardly bunch in the crotch.</p>
<p>Classy:  gracefully switching from wine to water at the company picnic.  Not classy:  maybe getting drunk and punching the sous chef in the face.  Oops.</p>
<p>Classy:  How much I love listening to public radio.  Not classy:  How much I love to watch The Real Housewives of  New Jersey.  Guilty&#8230; but why do they yell so much?</p>
<p>Classy: Enjoying mini chocolate dipped bananas on a summer afternoon.  Not as classy:  Trying to gnaw your way through a giant chocolate dipped banana.  It&#8217;s just not pretty friends.  Let&#8217;s try to avoid this scene this summer.  I think we all know why.</p>

<p>In case you&#8217;re wondering what I&#8217;ll be eating all summer, the answer is <a href="http://www.joythebaker.com/blog/2009/06/homemade-kettle-corn/" target="_blank">homemade kettle</a> corn and these little lovelies.  Gracious heavens, how have I not come to these sooner!?  Use the best chocolate you can get your hands on.  I used a Valrhona 70% chocolate.  How about nuts!?  Heck yes!  I liked chopped honey roasted peanuts, but walnuts or toasted pecans would be lovely too.</p>

<p><strong>Mini Chocolate Dipped Bananas</strong></p>

<p>3 firm but ripe bananas</p>
<p>9- 12 wooden popsicle sticks or lollipop sticks</p>
<p>2 cups chocolate chips or chunks, melted</p>
<p>1/2 cup nuts of your choice, pulverized in the food processor or finely chopped.</p>
<p>Peel three firm bananas and slice each banana into thirds or fourths.  Each banana slice should be about 3 inches tall.</p>
<p>Place wooden sticks or lollipop sticks through the center of one end of the banana slice, about 2 inches deep.</p>
<p>Place of a tray or plate, making sure that the bananas do not touch, cover with plastic wrap and freeze for four hours, or overnight.</p>
<p>Using a food processor, pulse the nuts until they are chopped very fine.  You can also do this by hand, it just takes a bit longer.  Place in a bowl and set aside for the dipping.</p>
<p>Melt chocolate over a double boiler.  Simmer 3 inches of water in a pot, place the chocolate in a heat proof bowl and, once the water is simmering, place the bowl of chocolate over the simmering water.  The water should not touch the bottom of the bowl.  Stir the chocolate pieces  occasionally until they&#8217;re all melted.</p>
<p>Remove bananas from the freezer, dip in chocolate, roll in nuts and place on a foil lined baking sheet.  When all the bananas are dipped, return to the freezer for 30 minutes to harden.  Once hard, wrap individually in plastic wrap and store in the freezer until you&#8217;re ready to snack on them.  Yum!  I think they&#8217;re best eaten when thawed at room temperature for about 7 minutes.</p>

<p>Pie takes time.  Pie requires attentions.  Pie demands love and care.  Pie, even for an everyday baker like me, is a lost art.</p>
<p>I needed a good, old fashioned, pie contest to help me slow down, take a breath, and dream up the most delicious pie I could.</p>
<p>The most delicious thing I could dream up was this:  bananas, <a href="http://www.joythebaker.com/blog/archives/439" target="_blank">homemade peanut butter</a>, chocolate, graham crackers, butter, whipped cream, and as much sugar as I could reasonably pack into a single pie dish&#8230;. and some chocolate shavings for good measure.</p>
<p>The result:  one mad Peanut Butter Banana Cream Pie.  The contest:  inspired by Whitney and several bottles of wine.  The contestants:  as serious about pie as they are about being incredibly fashionable and audaciously cool.  The competition:  stiff.  The winner:  one devastating, delicious and perfectly tart Key Lime Pie.</p>

<p>Did you need a use for you homemade <a href="http://www.joythebaker.com/blog/2009/02/how-to-make-homemade-peanut-butter/" target="_blank">Honey Roasted Peanut Butter</a>?   I&#8217;m sure you found some toasted bread to enjoy it with.  Just in case you needed an over the top excuse to enjoy life just a bit more&#8230; here&#8217;s a pie that, while it may not win any pie contests, is sure to make life a whole hell of a lot sweeter.</p>
<p>You&#8217;ll need some homemade peanut butter, but if you&#8217;re not feeling that ambitious, the jarred stuff will work too.</p>
<p>You&#8217;ll need a graham cracker crust, melted chocolate, peanut butter, banana cream pie filling, fresh whipped cream and chocolate shavings.  Here&#8217;s how it all comes together.</p>

<p><strong>Peanut Butter Banana Cream Pie</strong></p>
<p>adapted from Martha Stewart, but mostly from me.</p>

<p><strong>For the Crust:</strong></p>
<p>1 3/4 cups graham cracker crumbs</p>
<p>3 tablespoons sugar</p>
<p>pinch of salt</p>
<p>1/2 stick (4 Tablespoons) unsalted butter, melted</p>
<p><strong>For the Chocolate Layer:</strong></p>
<p>2 ounces of dark chocolate, melted over a double boiler</p>
<p><strong>For the Peanut Butter Layer:</strong></p>
<p>3/4 cup <a href="http://www.joythebaker.com/blog/archives/439" target="_blank">homemade peanut butter</a>, or the jarred stuff, chunky or smooth as you see fit</p>
<p><strong>For the Banana Layer:</strong></p>
<p>1/2 cup granulated sugar</p>
<p>1/4 cup cornstarch</p>
<p>1/4 teaspoon salt</p>
<p>4 large egg yolks</p>
<p>2 cups whole milk</p>
<p>2 Tablespoons cold unsalted butter</p>
<p>3 ripe bananas, thinly sliced</p>
<p><strong>For the Whipped Cream Layer:</strong></p>
<p>1 1/2 cups heavy whipping cream</p>
<p>2 teaspoons powdered sugar</p>
<p>1/2 teaspoon vanilla extract</p>

<p>To make the crust, stir the graham cracker crumbs, sugar and salt together in a medium bowl.  Pour over the melted butter and stir until all of the dry ingredients are uniformly moist.  I use my fingers.  Turn the ingredients into a 9-inch pie pan and pat with your fingers to create an even layer of crumbs of the bottom and up the sides of the pie pan.</p>
<p>Put the pan in the freezer while you preheat the oven.</p>
<p>Preheat the oven to 350 degrees F.  Once heated, place the pie crust on the center rack of the oven and bake for 10-12 minutes.  Remove from oven and set crust aside to cool.</p>
<p>For the chocolate layer, put two inches of water in a medium sauce pan, once simmering, place a larger bowl with the 2 ounces of chocolate in it over the simmering water.  Melt the chocolate in this double boiler situation.  Once cooled, pour into the baked graham cracker crust and spread around with a spatula.  Place in the refrigerator to cool and harden.</p>

<p>Prepare the peanut butter.  Once the chocolate is cooled, spread the peanut butter over the melted and hardened chocolate.</p>
<p>To prepare the banana filling, combine granulated sugar, cornstarch, and salt in a bowl. Add egg yolks, and whisk until smooth. Bring milk to a simmer in a saucepan over medium heat. Add 1/2 cup milk to yolk mixture in a slow, steady stream, whisking constantly. Pour mixture into pan with hot milk, and cook, whisking constantly, until mixture begins to bubble and is very thick, about 6 minutes.  Make sure to keep an eye on this and whisk constantly over a low flame.  The cornstarch will make the mixture thicken quickly.</p>

<p>Pour milk mixture through a large-mesh sieve into a bowl. Add butter, and stir until melted. Fold in bananas. Pour into crust. Place plastic wrap directly on surface of filling to prevent a skin from forming. Refrigerate for 2 hours.</p>
<p>Make the topping: Beat together cream, sugar, and vanilla until soft peaks form. Spread whipped cream over filling. Using a rubber spatula or the back of a spoon, shape topping into peaks.</p>

<p>Make chocolate shavings:  Carefully run a sharp knife along the back side of a dark chocolate bar towards yourself.  Quickly sprinkle the shavings on the top of the pie.  It&#8217;s that easy!</p>

<p>It should come as no surprise that I relate to the world through food.  Sure, I&#8217;m fairly well adjusted, I can carry on a warm conversation and function in life, but in the secret world that is my brain, I&#8217;m always trying to understand the world around me by relating it to something I&#8217;ve eaten.</p>
<p>Crazy?  Maybe.  Confusing?  Let me explain.</p>
<p>Say I walk into my parents&#8217; house and am greeted with a hug and kiss from my father.  That&#8217;s just like eating a bowl of vanilla bean ice cream smothered with warm dulce de leche sauce.  The hug from my dad and the ice cream create the same feeling in my brain.  Get it?</p>
<p>The smell of fresh rain on concrete is just like eating a grilled cheese sandwich and tomato soup.</p>
<p>Having a heart to heart with my mom is just like sipping Earl Grey tea with extra sugar and milk.</p>
<p>Getting a paper cut is just like taking a shot of cheap tequila with salt and dry limes.</p>
<p>Falling absolutely, head over heals, silly in love with someone is just like smooth bourbon and cigarettes at midnight.</p>
<p>Sitting next to Grandmother at the dinner table and feeling her almost thoughtlessly stroke my hand as if it were her own&#8230; that&#8217;s just like this perfectly spiced Banana Cranberry Bread.  Yes, there&#8217;s that much comfort in the bread.  It&#8217;s the real deal.</p>

<p>3 to 4 ripe bananas, smashed<br />
1/3 cup melted salted butter<br />
3/4-1 cup light brown sugar, depending on the level of sweetness you prefer<br />
1 egg, beaten<br />
1 teaspoon vanilla<br />
1 tablespoon bourbon<br />
1 teaspoon baking soda<br />
Pinch of salt<br />
1 teaspoon cinnamon<br />
1/2 teaspoon nutmeg<br />
Pinch of ground cloves<br />
1 1/2 cup of flour</p>
<p>1 cup fresh cranberries</p>
<p>No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and bourbon, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix.  Add the cranberries, and stir until just incorporated. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.</p>

<p style="text-align: left;">Well, this Banana Pudding Ice Cream is an exploration in comfort.  I absolutely love banana pudding.  It not just the pudding, it&#8217;s the fresh whipped cream and vanilla wafers that just make the dessert feel like ultimate comfort.</p>
<p style="text-align: left;">Banana Pudding reminds me of laughter- comfortable summertime, gather in the backyard after a big summer meal- laughter.</p>

<p style="text-align: left;">I decided to put all of the goodness of Banana Pudding into my ice cream maker, laughter and all.  I have to admit, I did feel a bit like Ben and Jerry throwing this dessert together.  The batch was HUGE, so I&#8217;ll cut it half for you all.  The ice cream is pretty sweet, has lots of banana pudding flavor, fresh bananas and bits of vanilla wafer cookies.   If you have an ice cream maker, do try this dessert.  It&#8217;s summery goodness.</p>

<p style="text-align: left;"><strong>Banana Pudding Ice Cream</strong></p>

<p style="text-align: left;">4 ounces Cool Whip (1/2 of an 8ounce container)</p>
<p style="text-align: left;">7 ounces sweetened condensed milk (1/2 of a 14 ounce can)</p>
<p style="text-align: left;">scant 1/2 gallon milk (reserve about 1 cup for you morning cereal)</p>
<p style="text-align: left;">1 (3 1/2 ounce) package Jello Banana Cream Instant Pudding</p>
<p style="text-align: left;">1/2 teaspoon vanilla</p>
<p style="text-align: left;">2 bananas (mashed)</p>
<p style="text-align: left;">1/2 box of vanilla wafers, crushed</p>
<p style="text-align: left;">In a bowl mix cool whip, condensed milk, banana pudding and about 1/2 of the half gallon of milk.  Add chopped bananas and vanilla wafers.</p>
<p style="text-align: left;">Pour mixture into an ice cream maker.  With machine on, pour in the rest of the half gallon of milk.</p>
<p style="text-align: left;">Stir the mixture and begin freezing according the manufacturers instructions.  My ice cream machine took about 15 minutes to get to soft ice cream.</p>
<p style="text-align: left;">Remove very soft ice cream and place in a freezer friendly plastic container.    Serve with slice bananas and vanilla wafers.</p>

<p style="text-align: left">1 1/4 cup whole wheat flour</p>
<p style="text-align: left">1/3 cup cornmeal</p>
<p style="text-align: left">1 Tablespoon sugar</p>
<p style="text-align: left">2 teaspoons baking powder</p>
<p style="text-align: left">1 teaspoon salt</p>
<p style="text-align: left">2 large eggs, separated</p>
<p style="text-align: left">1/4 cup vegetable oil, plus additional for brushing the skillet</p>
<p style="text-align: left">1 1/2 cup whole milk, plus additional if needed</p>
<p style="text-align: left">1 ripe banana, diced or mashed</p>
<p style="text-align: left">1/4 cup walnuts, chopped</p>
<p style="text-align: left">Whisk together flour, cornmeal, sugar, baking powder and salt in a large bowl  Whisk together yolks, oil and 1 1/2 cups milk in another bowl and add to the flour mixture, whisking until smooth.  Let batter stand for 5 minutes to allow flour to absorb liquid (batter will thicken).</p>
<p style="text-align: left">If batter is too thick to fall easily from a spoon, stir in 1 to 2 tablespoons additional milk.</p>
<p style="text-align: left">Fold in banana and walnuts.</p>
<p style="text-align: left">Beat egg whites in a large bowl with an electric mixer at moderately high speed until they just hold stiff peaks.  With a whisk, gently but thoroughly fold into batter.</p>
<p style="text-align: left">Brush a griddle or 12-inch nonstick skillet with oil and heat over moderately high heat until hot but not smoking.  Reduce heat to moderate.  Working in batches of 4, spoon 2 tablespoons batter per pancake into a hot skillet, spreading it if necessary to form 3- 3 1/2 inch rounds.  Cook pancakes until bubbles appear on surface, edges are set and undersides are golden, 45 seconds to 1 minute.  Flip pancakes with a metal spatula and cook until undersides are golden and pancakes are cooked through.  Lower heat if pancakes brown too quickly and insides aren&#8217;t set.  Transfer pancakes to plate and serve with Vanilla- Brown Sugar Syrup.  Brush griddle with more oil between batches.</p>

<p style="text-align: left">1 1/2 cups packed dark brown sugar</p>
<p style="text-align: left">1 1/2 cups water</p>
<p style="text-align: left">3 Tablespoon unsalted butter</p>
<p style="text-align: left">1/8 teaspoon salt</p>
<p style="text-align: left">1 Tablespoon fresh lemon juice</p>
<p style="text-align: left">1/2 teaspoon vanilla extract</p>
<p style="text-align: left">Combine brown sugar, water, butter, and salt in a 2-quart heavy saucepan and bring to a oil, stirring until sugar is dissolved.  Boil until syrupy and reduced to about 1 1/2 cups, about 12-15 minutes.  Remove from heat and stir in lemon juice and vanilla, then let cool to warm or room temperature.</p>

<p style="text-align: left">The recipe for this banana cake produces a super moist, but not super dense cake.  It doesn&#8217;t have the heaviness of banana bread, but it has all the delicious banana flavor.  The walnuts give the cupcakes lots of flavor and texture variation.  And the chocolate chunks?  I try to sneak chocolate into everything, and these were no exception.</p>

<p style="text-align: center">2 1/2 cups light brown sugar, packed</p>

<p style="text-align: center">2 cups ripe bananas, mashed</p>
<p style="text-align: center">(about 4 medium bananas)</p>
<p style="text-align: center">3 cups all purpose flour</p>
<p style="text-align: center">1/2 teaspoon salt</p>
<p style="text-align: center">2 teaspoons baking soda</p>
<p style="text-align: center">1 cup walnuts, chopped</p>
<p style="text-align: center">1/2 cup semi sweet chocolate chunks</p>

<p style="text-align: left">Preheat the oven to 350.  Sift together the flour, salt and baking soda.  Set aside.  Mash the bananas and add the sour cream. Set aside.  Cream the butter in the sugar until pale and fluffy, about 4 minutes.  Beat in the vanilla extract.  Add the eggs, one at a time, beating each egg for 1 minute.  Scrape down the bowl after each addition.  Add the flour mixture alternately with the banana mixture, until just combined.  Fold in the nuts and chocolate.  Bake in cupcake papers, or a well greased and floured cupcake pan for 15- 20 minutes.  Check them after 15 minutes.</p>

<p style="text-align: center">1 1/2 cups butter, softened</p>
<p style="text-align: center">8oz cream cheese, softened</p>
<p style="text-align: center">1/4 cup light brown sugar, packed</p>
<p style="text-align: center">1 teaspoon vanilla extract</p>
<p style="text-align: center">2-4 tablespoons milk</p>
<p style="text-align: center">4-6 cups powdered sugar</p>
<p style="text-align: center">depending on desired consistency</p>
<p style="text-align: left">Cream the butter and cream cheese together in an electric mixer.  (Be sure that the two are at room temperature.  Cold cream cheese or butter can make your frosting lumpy.)  Add the brown sugar and vanilla extract, and beat for about 2 minutes.  Turn off mixer and add 2 cups of powdered sugar.  Turn the mixer on a low speed so the sugar doesn&#8217;t fly out of the bowl.  Slowly add more sugar alternately with the milk until you reach your desired consistency.  I like my cupcake frosting to be slightly more thick than cake frosting, so it can hold its shape on the cupcake.</p>

<p style="text-align: left">Because of the moist bananas in these cupcakes, they hold up very well in the freezer.   Bake them off, and tightly wrap unfrosted cupcakes for freezer storage.  Take them out and defrost as needed (you could even sneak them into the microwave for quick consumption) for a breakfast treat or unexpected company.  They&#8217;re delicious and flavorful with or without frosting!   Would I lie?  (No.)</p>
