<p>My bedroom bookcase seems to be made up of one part books and three parts dust.  </p>
<p>I tell you all of this to let you in on the fact that I&#8217;ve been feeling domestically restless these days.  The kind of restless that has had me daydreaming about moving into a downtown loft that I can&#8217;t afford.  The kind of restless that has had me daydreaming about decorating a downtown loft that I can&#8217;t afford with expensive furniture that I also can&#8217;t afford.  </p>
<p>Not being able to afford your daydreams?  Torture and motivation.  Together.   </p>
<p>This weekend I decided&#8230; get this&#8230; that it&#8217;s all ok! </p>
<p>I took to my kitchen with my rubber gloves, bleach spray and a few rags and I scrubbed and organized like I&#8217;ve never done before.  Yes, it&#8217;s just the kitchen.  No, I couldn&#8217;t get to my whole apartment.  But the scrubbing and organizing helped me remember that my humble little apartment, in the uncool part of town, is pretty darn sweet.  I don&#8217;t need the fancy loft and the expensive furniture.  I just need to make my little spot in the world a little brighter&#8230; with bleach.  </p>
<p>And the pancakes this weekend helped too.  Tremendous.</p>

<p>Berries.  Meyer lemon zest.  Buttermilk. Sweetened Meyer lemon mascarpone.  Delicious breakfast treat.</p>

<p><strong>Berry Meyer Lemon Pancakes</strong></p>
<p>     8-10 pancakes, enough for two</p>

<p>1 egg</p>
<p>1 cup flour</p>
<p>1 Tablespoon sugar</p>
<p>zest of 1 Meyer lemon</p>
<p>1 teaspoon baking powder</p>
<p>1/2 teaspoon baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1 cup buttermilk</p>
<p>2 Tablespoons butter, melted and cooled slightly</p>
<p>1 cup fresh blueberries or raspberries (thawed and drained berries work well too!)</p>
<p>oil or butter for cooking</p>

<p>In a small bowl rub the lemon zest into the granulated sugar until pale yellow and fragrant.  </p>
<p>In a large bowl, whisk together the egg, buttermilk and butter.  Add the flour, sugar, baking powder, baking soda and salt.  Stir until just combined.  The batter may be a bit lumpy.  That&#8217;s better than overmixing the batter.  Fold in the berries with a few strokes.  Not much stirring necessary.  </p>
<p>Heat a griddle pan or a cast iron skillet over medium heat.  Add a teaspoon of oil or a dab of butter and heat through.  Add 2 heaping tablespoons of batter to the pan.  Heat until bubbles form and start to pop.  Carefully flip over and cook through.   Place cooked pancakes on an oven proof plate and let rest in a 200 degree F oven while you fry the rest of the pancakes.  </p>
<p>Top pancakes with maple syrup or mascarpone sweetened with a dash of powdered sugar and the juice of one Meyer lemon.</p>

<p>Here&#8217;s what you&#8217;ll need for one big smoothie:  </p>
<p>A juicer</p>
<p>A blender</p>
<p>2 Tablespoons Meyer lemon juice</p>
<p>the juice of 1/2 a grapefruit (save the other half for tomorrow&#8217;s smoothie?) </p>
<p>1/2 cup fresh orange or tangerine juice</p>
<p>2 tablespoons honey</p>
<p>heaping 1/2 cup Greek yogurt</p>
<p>1 frozen banana (they blend better when frozen)</p>
<p>1/2 cup ice cubes</p>
<p>In a blender, combine juices, yogurt, and honey.  Blend for a few seconds.  Add the ice cubes and blend until smooth.  This recipe makes one giant smoothie.  Yumtown. </p>

<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 17px; margin-left: 0px; font-size: 12px; line-height: 18px; padding: 0px;">In a mixing bowl, sift together flours, sugar, baking powder, cream of tartar and salt.  Cut in shortening and butter until mixture resembles coarse meal.  Add the cheddar and black pepper and toss to combine.  In another bowl, combine egg and milk and beat lightly with a fork.  Add to flour mixture all at once, stirring enough to make a soft dough.</p>
<p style="margin-top: 0px; margin-right: 0px; margin-bottom: 17px; margin-left: 0px; font-size: 12px; line-height: 18px; padding: 0px;">Turn out onto a floured board and knead about 15 times.  Roll or pat out into a 1-inch thickness.  Cut into 2-inch rounds using a biscuit cutter or cut into 2×2-inch squares.  Reshape and roll dough to create more biscuits with excess scraps.  Brush tops with a bit of heavy cream and a sprinkle of fresh ground black pepper.  Place on an ungreased baking sheet and bake at 425 degrees F for 12-15 minutes.  Serve immediately with softened butter or top with bacon and a fried egg as breakfast sandwiches.</p>

<p>I just stepped into my kitchen, turned on the light and was greeted by a massive amount of dirty dishes&#8230; not to mention a random stick of butter I left out this morning.  </p>
<p>I walked across the way to the dining room table to find all of the half addressed holiday cards I have yet to send. </p>
<p>I shouldn&#8217;t even mention the atrocious pile of laundry that I&#8217;ve managed to ignore for weeks.  </p>
<p>But all is well.  All is juuuuust fine.  Why?  Because I&#8217;ve got my little nativity scene up.  My Christmas lights are twinkling.  I&#8217;ve hung silver snowflakes from my windows with scotch tape, and there are cranberry smells coming out of my kitchen.  At this rate, I can ignore the household atrocities well into the new year.  </p>

<p><strong>Honey Cranberry Cornmeal Quick Bread</strong></p>
<p>     recipe adapted from Epucurious.com</p>
<p>     makes one large 9&#215;5x3 loaf or two smaller loaves</p>

<p>1 cup all-purpose flour</p>
<p>1 cup white whole wheat flour (if you don&#8217;t have whole wheat flour, just use all-purpose flour)</p>
<p>1 cup medium or fine ground cornmeal (I used white cornmeal)</p>
<p>1/2 cup sugar</p>
<p>1 1/2 teaspoons salt</p>
<p>1 1/2 teaspoon baking powder</p>
<p>1/2 cup (1 stick) unsalted butter, melted</p>
<p>1/2 cup honey (or pure maple syrup if you have it on hand)</p>
<p>1 1/4 cup buttermilk</p>
<p>2 large eggs</p>
<p>1 teaspoon vanilla extract</p>
<p>3/4 cup chopped walnuts (reserving a few whole walnut halves for decorating the top)</p>
<p>1 heaping cup to 1 1/2 cups fresh cranberries</p>
<p>Arrange a rack in the center of the oven and preheat oven to 350 degrees F.  Butter and flour one 9&#215;5x3-inch loaf pan, or two slightly smaller loaf pans.  I think mine are 8&#215;4x3-inches and I made two smaller loaves.  Set aside the greased and floured loaf pans.  </p>
<p>In a large bowl, whisk together both flours, cornmeal, sugar, salt and baking powder.  </p>
<p>In a smaller bowl whisk together honey, eggs, buttermilk, melted butter and vanilla extract.  </p>
<p>Add the buttermilk mixture to the flour mixture and stir just until blended.  </p>
<p>Fold in the cranberries and walnuts.  </p>
<p>Divide batter between two smaller loaf pans or into one large loaf pan.  Spread evenly.  Add the whole walnut halves and place in preheated oven.  For smaller loaves bake for 40-50 minutes, or until a skewer inserted into the center of the loaf comes of clean.  For the larger loaf, bake for 60-70 minutes, or until a cake tester comes out clean.</p>
<p>Cool loaves in pan on a wire rack for 20 minutes.  Invert onto a plate or board.  Serve warm with butter or wrap and freeze for future you.</p>

<p>My Grandfather is the first person to pull a carton of grocery store branded Eggnog out of the refrigerator every year about this time.  When I see him reaching for the carton on the refrigerator door, I avoid all eye contact.  There is no offering.  There are no questions.  If Papa decides to pour you a glass&#8230; and it will be a GIANT glass&#8230; then you have to sit there, and drink every last bit&#8230; unless you want to be called a goshdarm vegan hippie.  Sure.. being a hippie might not be all that bad&#8230; but&#8230;well Eggnog shouldn&#8217;t be punishment and hippie shouldn&#8217;t be a bad word.  Dang!</p>
<p> So!</p>
<p>To avoid cartons of Eggnog coming from my fridge, I&#8217;ve created an Eggnog flavored pancake.  Not a dollop of actual Eggnog in sight.  Nothing to worry about here.  </p>
<p>Can I tell you something about these pancakes&#8230; you know, because you&#8217;re here and all&#8230; they are crazy/heck yes/ omg good.  Are you thinking what I&#8217;m thinking?  Weekend breakfast?  The answer is&#8230; yes!</p>

<p>I&#8217;ve broken down Eggnog into a few simple elements and thrown those elements into pancake batter&#8230; not all that genuis, but outta this world delicious.  All you need to rally that spot on Eggnog flavor is a bit of brown sugar, freshly grated nutmeg, eggs, milk and whiskey or rum.  If you don&#8217;t want to use the alcohol for your pancakes&#8230; well that&#8217;s totally understandable.  A good dose of pure vanilla extract will treat you just fine.  </p>

<p><strong>Egg Nog Pancakes</strong></p>
<p>     This recipe make enough pancakes for two.  Double the recipe to make a family sized portion.</p>

<p>1 cup all-purpose flour</p>
<p>1 tablespoon brown sugar</p>
<p>1 teaspoon baking powder</p>
<p>1/2 teaspoon baking soda</p>
<p>1/2 teaspoon salt</p>
<p>heaping 1/2 teaspoon freshly grated nutmeg</p>
<p>1/8 teaspoon cinnamon</p>
<p>pinch of ground allspice</p>
<p>3 Tablespoons butter melted until browned</p>
<p>1 egg</p>
<p>1 cup buttermilk</p>
<p>1 Tablespoon whiskey or spiced rum or 2 teaspoons vanilla extract</p>
<p>butter or a lightly colored oil for cooking pancakes</p>
<p>maple syrup for serving</p>
<p>In a small sauce pan, melt butter until much of the water has evaporated and little brown bits appear in the bottom of the pan.  Remove from the flame and add the nutmeg, cinnamon and allspice.  Set aside to cool a bit.</p>
<p>In a small bowl, beat the egg with the buttermilk.  Add the melted butter, being to sure to scrape all the browned bits and spices into the buttermilk and egg.  If the butter seizes up a bit in the cold milk, that&#8217;s ok. Add the whiskey/rum or vanilla extract and just whisk it all together. </p>
<p>In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt.  Add the wet ingredients to the dry ingredients and stir to incorporate.  Don&#8217;t overmix.  It&#8217;s ok if there are a few lumps.  </p>
<p>Let the batter rest, untouched for 5 minutes while you heat a griddle or skillet.  Add a tablespoon of canola oil or butter to the hot skillet.  Dollop heaping tablespoonfuls onto heated and oiled skillet and cook until evenly browned, flipping once.  Place cooked pancakes on an oven-proof plate in a warm oven until ready to serve.</p>

<p>In the event of some sort of big fat natural disaster in California, I may be up a creek without a paddle.  Sure, I&#8217;ve got the canned tuna, the emergency gallons of water and a few flashlights with dying batteries.  I&#8217;ve got the walking shoes, a space blanket and pepper spray&#8230; you need those things, right?   It&#8217;s just that I&#8217;m not sure the internets or my cellphone are going to do me much good in the event of a meltdown.  Won&#8217;t all the cell towers be jammed?  How am I going to reach out to my family?  I don&#8217;t think <a href="http://twitter.com/joythebaker" target="_blank">Twitter</a> will quite do the trick.  Clearly my only option is to jog to them&#8230; in a space blanket.  That seems to make the most sense.</p>
<p>My parents?  I think they&#8217;re just ahead of me in the emergency game.  They&#8217;ve got cell phones from 1993 and a telephone land line.  At least the land line will come in handy.  </p>
<p>My grandfather!?  He&#8217;ll fare better than all of us in an emergency.  He&#8217;s got Ham Radio.  Ham Radio is a sort of amateur radio system that allows people to talk to one another all over the world.  Don&#8217;t be fooled by the name.  Ham Radio is actually pretty badass.   Sort of like&#8230; trucker radio meets old school technology meets grandfather hobby.  In emergencies, Ham Radio is booming.  You better believe that in an emergency, my grandfather will be all over that radio.  Who he&#8217;ll be talking to?  I&#8217;m not exactly sure.  He&#8217;ll probably be saving the world.  I&#8217;ll be jogging my way to safety.  My parents will still be screening their phone calls with their answering machine.  Who is the hero?  Grandpa. </p>

<p>I tell you all of this because Lemon Poppy Seed Muffins (specifically the giant ((seriously giant)) kind from Costco) are my grandfather&#8217;s favorite.  He no doubt has a 48 pack of those giant muffins in his emergency kit.  You think I&#8217;m kidding.  I&#8217;m not.</p>
<p>Note:  my descriptions of Ham Radio here may hinge on trite and are most certainly superficial and inadequate.  </p>

<p>These are simple muffins.  You know these muffins.  They&#8217;re no big surprise to you.  Lemon.  Buttermilk.  A little crunch from poppy seeds. Sugary lemon glaze.  It&#8217;s a beautiful thing.  If you&#8217;d like to freeze these beauties to enjoy all week, do so without the glaze.  Success.  </p>

<p><strong>Lemon Poppy Seed Muffins </strong></p>

<p>2/3 cup granulated sugar</p>
<p>zest and juice of 1 lemon</p>
<p>2 cups all-purpose flour</p>
<p>2 teaspoons baking powder</p>
<p>1/4 teaspoon baking soda</p>
<p>1/4 teaspoon salt</p>
<p>3/4 cup buttermilk or sour cream</p>
<p>2 large eggs</p>
<p>1 teaspoon vanilla extract</p>
<p>1 stick (8 Tablespoons) butter, melted until browned and cooled</p>
<p>2 Tablespoons poppy seeds</p>
<p>2 Tablespoons granulated sugar (for topping the batter before baking)</p>
<p>For the Glaze</p>
<p>1 cup powdered sugar whisked together with 2 or 3 Tablespoons of lemon juice</p>
<p>Place a rack in the center of the oven and preheat oven to 400 degrees F.  Line a 12 mold, regular sized muffin tray with paper muffin liners, place the muffin pan on a baking sheet and set aside.  </p>
<p>In a large bowl, rub the granulated sugar with the lemon zest until the sugar is lightly colored and scented with lemon.  Whisk in the flour, baking powder, baking soda and salt.  In a medium sized bowl whisk together the eggs, buttermilk (or sour cream) vanilla extract, melted butter and lemon juice.  </p>
<p>Add the wet ingredients to the dry ingredients and fold together.  When almost thoroughly mixed, add the poppy seeds.  Divide batter between muffin cups.  Sprinkle each would be muffing with granulated sugar.  </p>
<p>Bake for 15 to 18 minutes or until the tops are golden and a skewer inserted in the center of the muffin comes out clean.  </p>
<p>Let cool in the pan for 5 minutes then transfer to a wire rack to cool completely before glazing.  If you&#8217;re freezing the cupcakes for future eating, skip the glaze.  It doesn&#8217;t freeze well.</p>

<p>Yeast risen, overnight waffles are pretty stellar.  </p>
<p>Make the batter Saturday afternoon, let it rise on the counter for an hours or so.  Cover and refrigerate until you&#8217;re ready for breakfast on Sunday morning.  </p>
<p>On Sunday I stirred my batter a bit and let it to rest on the counter for an hour to come to room temperature and rise a bit.</p>

<p>The batter will be goopy, but don&#8217;t let that deter you.  These beauties bake up crisp and full of yeasty, maple sugar, nutty flavor.  Adding white whole wheat flour adds a touch of nuttiness to compliment the brown butter.  Yes&#8230; these waffles are full of character.  </p>
<p>Don&#8217;t even get me started on the bacon.  It sweet and spicy and&#8230; bacon.  It&#8217;s inherently perfect.  </p>

<p><strong>Weekend Waffles</strong></p>
<p>     adapted from King Arthur</p>
<p>     makes 2 big square (four sectioned) waffles, enough for 2 and a half people.</p>

<p>1 1/2 cups whole milk</p>
<p>7 Tablespoons unsalted butter, melted until browned bits appear</p>
<p>3 Tablespoons maple syrup (the real stuff or simply use brown sugar)</p>
<p>3/4 teaspoon salt</p>
<p>1 teaspoon vanilla extract</p>
<p>2 eggs</p>
<p>1 cup all-purpose flour</p>
<p>1 cup white whole wheat flour</p>
<p>1 1/2 teaspoons instant yeast</p>
<p>Heat the milk until it is hot but not boiling.  Place it in a large bowl (you&#8217;ll need the room for expansion) and mix in the browned butter, maple syrup (or brown sugar) salt and vanilla extract.  Stir until the mixture has cooled to lukewarm.  Add the eggs, flour, salt and yeast and stir all together.  If there are a few lumps, that&#8217;s fine!</p>
<p>Cover mixture with plastic wrap and a clean kitchen towel and leave to rise for 1 to 1 1/2 hours.  The mixture will begin to bubble.  </p>
<p>You can cook the waffles at this point, or place the batter in the refrigerator to rest and develop flavor overnight.  </p>
<p>Remove the batter from the fridge about an hour before you&#8217;d like to eat breakfast.  Stir the batter and let it come to room temperature.  When ready to cook, preheat the waffle iron and spray with nonstick cooking spray.  Add 1 1/2 cups of batter (depending on the size of your waffle iron) and cook until golden brown.  </p>
<p>Top with butter and syrup and anything good. </p>

<p>Preheat oven to 400 degrees F.  Line a baking sheet with parchment paper or foil.  Place bacon strips on sheet, close but not overlapping.  Drizzle with maple syrup, about 2 or 3 Tablespoons per 10 bacon strips.  Sprinkle with as much black pepper as you like. Bake for 10 minutes then remove pan from the oven and carefully flip bacon strips over.  Bake for another 5 to 10 minutes or until the bacon reaches your happy point of doneness.</p>

<p>Aaaand Snickers it is&#8230; but first, let me show you what I eat morning, noon and night:  scrambled eggs.  </p>

<p>Are you picky about how you cook your eggs?  Maybe a little?  That&#8217;s no crime&#8230; everyone likes their eggs a different way.  I&#8217;m more of a dry scramble kind of girl.  Here&#8217;s my step-by-step guide to eggs for one.  </p>
<p>Start with good quality eggs.  Fresh medium or large eggs from the farmer&#8217;s market are mighty fine.  </p>

<p>Beat eggs lightly with a fork.  </p>

<p>Melt just over a tablespoon of butter in a pan over low heat.  Add eggs and stir eggs immediately and constantly with a wooden spoon.  </p>

<p>It may take 3 to 4 minutes for the eggs to become just set but still creamy.  At this point add a scant tablespoon of heavy cream,  a small pat of butter and a generous pinch of salt.  Continue to stir.</p>

<p>When eggs are scrambled to your liking, remove from the pan, top with a touch more salt and fresh ground pepper, and serve with buttered toast.  I garnished my eggs with nasturtium petals (they&#8217;re pretty), but chives are also lovely.</p>

<p>Let me tell you a little about Tracey.  Tracey had her 15th birthday last week.  Tracey&#8217;s best friend Maggie sent me a pretty precious email asking me if I would send Tracey an autographed picture of myself for her birthday.  See,  Tracey is a great baker and a huuuuge fan of my site.  </p>
<p>I&#8217;m not the sort to have pictures of myself to autograph on hand&#8230; that would be totally weird,  so I sent Tracey a little birthday gift and handwritten note.  Easy enough, right?   In return Tracey sent me a very long, very excited, exceedingly adorable email to thank me for her birthday present.  Seriously friends&#8230; this girl is priceless.  </p>

<p>Tracey makes a mean<a href="http://www.joythebaker.com/blog/2008/01/blueberry/" target="_blank"> lemon pound cake with blueberry sauce</a>.  </p>
<p>Tracey almost set her house ablaze trying to make these <a href="http://www.joythebaker.com/blog/2008/08/oh-my-god-doughnuts/" target="_blank">doughnuts</a>.  </p>
<p>Tracey is obsessed with muffins&#8230; and feeds them to her dog.  Let&#8217;s all just pretend like that&#8217;s normal.  </p>
<p>Tracey got a &#8220;Tracey the Baker&#8221; apron for her birthday.  Clearly I have competition. </p>
<p>By sharing loads homemade cookies, Tracey is well on her way to becoming the most popular girl in school.  Don&#8217;t get too popular Tracey&#8230; it might be overrated.    </p>
<p>Tracey giggles a lot&#8230; not in emails, but this is just something I&#8217;ve surmised from being 15 and eating a lot of sugar once upon a time.</p>
<p>Tracey?  Is that Jesus peeking over your shoulder on your fridge there?  If so&#8230; awesome.  If not&#8230; awkward. </p>

<p>Here&#8217;s the trick with these muffins:  use real maple syrup.  Don&#8217;t even think about using the pancake syrup you might have hiding in your fridge.  No way friend-o!</p>
<p>These muffins are moist, sweet, drenched in maple flavor and just lovely for Autumn.  The pecans round out the sweetness and add just the right crunch.  Weekend breakfast?  Heck yes!  You win!</p>
<p><strong>Maple Pecan Muffins</strong></p>
<p>     adapted from <a href="http://www.amazon.com/Hummingbird-Bakery-Cookbook-Tarek-Malouf/dp/1845978315/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1256181073&amp;sr=8-1" target="_blank">The Hummingbird Bakery Cookbook</a></p>
<p>     makes 12-16 cupcakes</p>

<p>2 2/3 cups all-purpose flour</p>
<p> 3/4 cups sugar</p>
<p>1 1/2 teaspoon baking powder</p>
<p>1/2 teaspoon baking soda</p>
<p>3/4 teaspoon salt</p>
<p>1 1/2 cup buttermilk</p>
<p>1 egg</p>
<p>1/2 vanilla bean scraped or 1 teaspoon vanilla extract</p>
<p>5 Tablespoons browned butter (start with 6 tablespoons and melt it down just over 5 Tablespoons)</p>
<p>3/4 cup maple syrup, divided</p>
<p>1 cup coarsely chopped pecans, plus 12 pecan haves (or the largest pecan pieces of the bunch for topping the muffins)</p>
<p>Preheat oven to 325 degrees F.  Line a cupcake pan with paper liners and set aside.  </p>
<p>In a small saucepan, melt 6 tablespoons of butter over medium flame.  Butter should crackle and foam and then produce little brown bits at the bottom of the pan.  Turn flame to low, scrape brown bits from the bottom of the pan (that&#8217;s where all the flavor is hiding) and remove from heat to cook a bit before using.  </p>
<p>In a large bowl sift together flour, sugar, baking powder, baking soda and salt.  In a small bowl whisk together buttermilk, egg and vanilla bean or extract.  </p>
<p>Add the wet ingredients all at once to the dry ingredients and stir with a large spoon until just incorporated.  Add melted butter and carefully mix until incorporated.  Add the chopped nuts and half of the maple syrup (you can eyeball half of 3/4 cup) and fold until evenly dispersed throughout the batter.  </p>
<p>Fill the muffin cups until about two thirds full (I was able to make 16 cupcakes).  Place a large pecan piece on top of each unbaked muffin and drizzle all of the muffins with the remaining maple syrup.  </p>
<p>Bake muffins for 20-25 minutes or until a metal skewer inserted in the center comes out clean.  </p>
<p>Allow to cool in the muffin pan for 10 minutes before removing to serve.</p>
