<p>I just stepped into my kitchen, turned on the light and was greeted by a massive amount of dirty dishes&#8230; not to mention a random stick of butter I left out this morning.  </p>
<p>I walked across the way to the dining room table to find all of the half addressed holiday cards I have yet to send. </p>
<p>I shouldn&#8217;t even mention the atrocious pile of laundry that I&#8217;ve managed to ignore for weeks.  </p>
<p>But all is well.  All is juuuuust fine.  Why?  Because I&#8217;ve got my little nativity scene up.  My Christmas lights are twinkling.  I&#8217;ve hung silver snowflakes from my windows with scotch tape, and there are cranberry smells coming out of my kitchen.  At this rate, I can ignore the household atrocities well into the new year.  </p>

<p>Tart, fresh cranberries meet honey sweetened cornbread.  Throw in some walnuts, throw in a loaf pan or two&#8230; you&#8217;ve got one lovely, dense, lightly crunchy quick bread.  Great for breakfast.  Super for gift giving.  Wrap it up.  Freeze it up.  Butter it up.  This  bread is simple and comfortable.  </p>

<p><strong>Honey Cranberry Cornmeal Quick Bread</strong></p>
<p>     recipe adapted from Epucurious.com</p>
<p>     makes one large 9&#215;5x3 loaf or two smaller loaves</p>

<p>1 cup all-purpose flour</p>
<p>1 cup white whole wheat flour (if you don&#8217;t have whole wheat flour, just use all-purpose flour)</p>
<p>1 cup medium or fine ground cornmeal (I used white cornmeal)</p>
<p>1/2 cup sugar</p>
<p>1 1/2 teaspoons salt</p>
<p>1 1/2 teaspoon baking powder</p>
<p>1/2 cup (1 stick) unsalted butter, melted</p>
<p>1/2 cup honey (or pure maple syrup if you have it on hand)</p>
<p>1 1/4 cup buttermilk</p>
<p>2 large eggs</p>
<p>1 teaspoon vanilla extract</p>
<p>3/4 cup chopped walnuts (reserving a few whole walnut halves for decorating the top)</p>
<p>1 heaping cup to 1 1/2 cups fresh cranberries</p>
<p>Arrange a rack in the center of the oven and preheat oven to 350 degrees F.  Butter and flour one 9&#215;5x3-inch loaf pan, or two slightly smaller loaf pans.  I think mine are 8&#215;4x3-inches and I made two smaller loaves.  Set aside the greased and floured loaf pans.  </p>
<p>In a large bowl, whisk together both flours, cornmeal, sugar, salt and baking powder.  </p>
<p>In a smaller bowl whisk together honey, eggs, buttermilk, melted butter and vanilla extract.  </p>
<p>Add the buttermilk mixture to the flour mixture and stir just until blended.  </p>
<p>Fold in the cranberries and walnuts.  </p>
<p>Divide batter between two smaller loaf pans or into one large loaf pan.  Spread evenly.  Add the whole walnut halves and place in preheated oven.  For smaller loaves bake for 40-50 minutes, or until a skewer inserted into the center of the loaf comes of clean.  For the larger loaf, bake for 60-70 minutes, or until a cake tester comes out clean.</p>
<p>Cool loaves in pan on a wire rack for 20 minutes.  Invert onto a plate or board.  Serve warm with butter or wrap and freeze for future you.</p>

<p>I feel like I&#8217;ve been haunted by the three bags of fresh cranberries I bought about a month ago.</p>
<p>You&#8217;d think I&#8217;ve baked enough cranberry filled goodies to make these cranberries a thing of the past.  Nope.  Between the <a href="http://www.joythebaker.com/blog/archives/181" target="_blank">Banana Cranberry Bread</a>, the <a href="http://www.joythebaker.com/blog/archives/173" target="_blank">All Purpose Cranberry Apple Cake</a> and the Cranberry Sauce, how did I still have a lone back of cranberries dancing around in my fridge?</p>
<p>I&#8217;m happy to say, that with this deliciously moist and golden Cranberry Coffee Cake, my days of withering cranberries in the fridge are over.  But&#8230; um&#8230; I kinda miss them.  I&#8217;m thinking numerous Prosecco and Cranberry Cocktails are in my future, which means&#8230; more fresh cranberries!  I hope you&#8217;re not sick of cranberry recipes yet.  It ain&#8217;t over, this baker would really like a cocktail.</p>

<p style="text-align: left;">The thing about this coffee cake.  The thing that makes it over the top, crazy delicious is the crunchy streusel topping.  And I&#8217;ve got tricks.  I take a few handfuls of the streusel topping and swirl it into the coffee cake batter.  Yea!  Awesome!  Delicious!  I take the rest of the topping, which is seriously ample and layer it on top before baking.  The coffee cake bakes up a delicious golden color, the streusel topping is perfectly crunchy, and the cranberries add the perfect bright tartness.  For reals.</p>

<p style="text-align: left;">bake in a 9 x 13-inch pan</p>
<p>Cake:</p>
<p>4 cups all purpose flour</p>
<p>4 teaspoons baking powder</p>
<p>1 1/2 teaspoons salt</p>
<p>2 sticks unsalted butter, softened</p>
<p>2 cups granulated sugar</p>
<p>1/2 cup brown sugar</p>
<p>4 eggs</p>
<p>1/2 teaspoon almond extract</p>
<p>1 cup sour cream mixed with 2 Tablespoons of milk</p>
<p>4 cups fresh cranberries, roughly chopped</p>
<p>Topping:<br />
1 1/3 cups all-purpose flour<br />
1 1/3 cups lightly packed brown sugar<br />
1/2 tsp ground cinnamon<br />
1 stick unsalted butter, well-softened<br />
2/3 cup finely chopped pecans (optional)<br />
1/3 cup quick oats</p>

<p>Put a rack in middle oven and preheat oven to 350 degrees F.   Butter and flour a 9×13-inch pan and set aside.</p>
<p>Sift together flour, baking powder and salt into a bowl.  Combine butter and sugars in a large mixing bowl and beat with an electric mixer at medium-high speed until pale and fluffy, about 3 to 5 minutes.   Beat in eggs one at a time, beating well after each addition, then beat in almond extract.  Reduce speed to low and add flour mixture and sour cream mixture in alternate batches, beginning and ending with the flour mixture, and mixing until just incorporated.  Fold in cranberries.  Spoon batter into baking dish and spread evenly.</p>
<p>For the topping, place the flour, brown sugar, nuts, cinnamon and oats in a large bowl and stir well with a wooden spoon. Work the butter into the mixture with your fingertips until evenly distributed. Take two full handful of the topping and spread it over the cake batter.  Use a knife to swirl the topping into the batter. Spread the rest of the topping evenly over the cranberry cake batter.</p>
<p>Bake until golden brown and a wooden pick or skewer inserted in center comes out clean, about 1 hour to 1 hour and 15 minutes.  Cool in pan on a rack for 15 minutes.  Serve in big warm slices with a cup of creamy coffee.</p>

<p>It should come as no surprise that I relate to the world through food.  Sure, I&#8217;m fairly well adjusted, I can carry on a warm conversation and function in life, but in the secret world that is my brain, I&#8217;m always trying to understand the world around me by relating it to something I&#8217;ve eaten.</p>
<p>Crazy?  Maybe.  Confusing?  Let me explain.</p>
<p>Say I walk into my parents&#8217; house and am greeted with a hug and kiss from my father.  That&#8217;s just like eating a bowl of vanilla bean ice cream smothered with warm dulce de leche sauce.  The hug from my dad and the ice cream create the same feeling in my brain.  Get it?</p>
<p>The smell of fresh rain on concrete is just like eating a grilled cheese sandwich and tomato soup.</p>
<p>Having a heart to heart with my mom is just like sipping Earl Grey tea with extra sugar and milk.</p>

<p>Falling absolutely, head over heals, silly in love with someone is just like smooth bourbon and cigarettes at midnight.</p>
<p>Sitting next to Grandmother at the dinner table and feeling her almost thoughtlessly stroke my hand as if it were her own&#8230; that&#8217;s just like this perfectly spiced Banana Cranberry Bread.  Yes, there&#8217;s that much comfort in the bread.  It&#8217;s the real deal.</p>

<p><strong>Banana Cranberry Bread</strong></p>

<p>3 to 4 ripe bananas, smashed<br />
1/3 cup melted salted butter<br />
3/4-1 cup light brown sugar, depending on the level of sweetness you prefer<br />
1 egg, beaten<br />
1 teaspoon vanilla<br />
1 tablespoon bourbon<br />
1 teaspoon baking soda<br />
Pinch of salt<br />
1 teaspoon cinnamon<br />
1/2 teaspoon nutmeg<br />
Pinch of ground cloves<br />
1 1/2 cup of flour</p>
<p>1 cup fresh cranberries</p>
<p>No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and bourbon, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix.  Add the cranberries, and stir until just incorporated. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.</p>

<p>It&#8217;s November, and that means that we&#8217;ve undeniably entered the holiday season.  In my world that means lots of family, lot of parties and eating a ridiculous, almost painful amount of food.  Cocktail parties.  Tacky Christmas sweater parties.  Surprise guests and&#8230;. my oh my&#8230; is it too early to be this excited?</p>
<p>Despite all of my (possibly premature) excitement, I&#8217;ll admit that I&#8217;m sometimes at a loss when it comes to a holiday night out.  If I&#8217;m not fussing over what I&#8217;m going to wear, I&#8217;m getting nit picky about the dessert that I&#8217;m going to bring.  It&#8217;s enough to drive myself crazy and send me straight to the egg nog bowl when I hit the party.  The egg nog is always such a nice thought, but the actual introduction of egg nog into my system is a very, very bad idea.</p>
<p>This weekend I picked up a few party dresses and tights- festive and hip but not over the top.  I also baked up the perfect all purpose holiday cake.  It&#8217;s a winner because you can throw it together with virtually anything and everything you have in your pantry.</p>

<p>Here&#8217;s how this simple cake is going to rock your holiday party life just as hard as I&#8217;m going to rock my fierce new black dress and silver heels:</p>
<p>-Bundt pans equal instant pretty whether dusted with powdered sugar or dripping with glaze.</p>
<p>-If you have apples, you have a cake.</p>
<p>-No mixer necessary!  All you&#8217;ll need is two bowls and a wooden spoon.</p>
<p>-Your house will smell like warm apples and cinnamon.  Winner!</p>
<p>-Rum or Bourbon or orange juice-  choose your adventure.</p>
<p>-This cake stays moist for days and even tastes better the second day!</p>
<p>-Some of the variations I thought of are all included in the ingredient list.</p>
<p>Bring on the holidays.  Bring on the parties.  I&#8217;ve got the goods.  I&#8217;ve got the heels.  I&#8217;ve got the cake.  I&#8217;m ready to go.</p>
<p>Incidentally, you may need to remind me of my early enthusiasm sometime in early December.  I&#8217;m not very good at pacing myself.</p>

<p><strong>All Purpose Holiday Cake or  Apple Cranberry Bourbon Cake</strong></p>

<p>3 cups all-purpose flour</p>
<p>1 teaspoon baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1 1/2 cups vegetable oil</p>
<p>3 large eggs</p>
<p>1 1/2 cups granulated sugar</p>
<p>1/2 cup lightly packed brown sugar</p>
<p>1 Tablespoon ground cinnamon</p>
<p>1/2 teaspoon freshly grated nutmeg</p>
<p>1 Tablespoon dark Rum (or Bourbon or orange juice)</p>
<p>1 teaspoon vanilla extract</p>
<p>3 Cortland or Empire or Granny Smith or Gala apples, peeled, cored and cut into a 1/4 inch dice (you can make the apple slices slightly bigger if you like a chunkier cake)</p>
<p>1/2 cup fresh cranberries, coarsely chopped (or raisins or dried cranberries or dried apricots diced or chopped walnuts maybe even chocolate chips)</p>

<p>Put a rack in middle of oven and preheat oven to 350 degrees F.  Generously butter and flour a 12-cup Bundt pan, knocking out excess flour.</p>
<p>Sift together flour, baking soda, and salt into a bowl.</p>
<p>Whisk together oil, eggs, sugars, cinnamon, nutmeg, rum or bourbon and vanilla in a large bowl until just combined.  Fold in flour mixture until just combined, then fold in apples and cranberries.  The batter will feel thick and heavy.  Spoon the batter into pan.</p>
<p>Bake until a wooden pick or skewer inserted in center of cake comes out clean, about 1 hour and 15 minutes.  Cool cake in pan on a rack for 30 minutes, then turn out onto rack to cool completely.  Dust with powdered sugar before serving.</p>

<p>I&#8217;m a huge breakfast fanatic.  I usually go for something hearty, healthy and full of surprise goodies.  That&#8217;s not to say that I don&#8217;t sometimes reach for a donut and some coffee, but this go around I opted for old-fashioned oatmeal with the gorgeous flavors of cranberry, orange and almond.  I threw in a bit of brown sugar for good measure, and surrounded my oatmeal with cold milk.  It was a delightful breakfast- satisfying but not too heavy.  It&#8217;s the kind of breakfast that convinces you you&#8217;re ready to take on the world.  Brilliant<span id="more-70"></span></p>

<p style="text-align: left">1 cup water</p>
<p style="text-align: left">pinch of salt</p>
<p style="text-align: left">1/2 cup old fashioned oats</p>
<p style="text-align: left">2 Tablespoons dried cranberries</p>
<p style="text-align: left">6 raw or toasted almonds</p>
<p style="text-align: left">1/2 teaspoon grated orange zest</p>
<p style="text-align: left">optional:</p>
<p style="text-align: left">1 Tablespoon brown sugar</p>
<p style="text-align: left">1/4 cup milk</p>
<p style="text-align: left">Bring water and salt to a rolling boil in a small sauce pan.  Add oats and reduce to medium heat and cook for 5 minutes, stirring occasionally.  Add 1 Tablespoon of dried cranberries into the cooking oatmeal.</p>
<p style="text-align: left">After 5 minutes, remove from heat, and transfer to a serving bowl.  Sprinkle with remaining cranberries, orange zest, almonds, brown sugar and milk.  Enjoy!</p>
