<p>Dear Downstairs Neighbor,</p>
<p>Is it noisy down there?  Does it seems sometimes like I&#8217;m stomping around on my second floor apartment floors?  Probably.  I am.  I can have some heavy feet from time to time.  Do I do it on purpose?  Sometimes.  Yes.  To be fair, I do this because, as you know, I left cupcakes on your doorstep for you one afternoon and I watched you discover them and take them to the dumpster to throw away.  I saw you do that.  Not cool.  Not cool at all.  </p>
<p>Dearest Friend (pssst!&#8230; that&#8217;s you),</p>
<p>Sometimes I make recipes vegan simply because I&#8217;m out of eggs and/or butter.  It&#8217;s true.  A severe and persisting egg shortage in my house was the inspiration for the Vegan Pumpkin Bread.  If you&#8217;re vegan, you&#8217;re probably annoyed.  That&#8217;s ok.  I can be annoying.  If you&#8217;re not vegan, you&#8217;re probably happy to know that you can still bake up some wonders without eggs and butter.  Your call.  </p>

<p>Pumpkin Bread.  Ooooh, you&#8217;re a tough one to futz up.  Pumpkin adds moisture and flavor that just won&#8217;t quit.  When combined with plenty of spices, pumpkin bread becomes a treat that will stay fresh and moist for days and days.  This version is sweetened with both brown sugar and maple syrup.  I. Love. It.  </p>
<p style="text-align: left;"><strong>Vegan Pumpkin Walnut Bread</strong></p>
<p>     makes 2 loaves</p>

<p>2 cups all-purpose flour</p>
<p>1 1/2 cups white whole wheat flour ( or whole wheat flour&#8230; or just use only all-purpose flour)</p>
<p>2 cups light brown sugar, packed</p>
<p>1/3 cups granulated sugar</p>
<p>2 teaspoons baking soda</p>
<p>1 teaspoon baking powder</p>
<p>1 teaspoon salt</p>
<p>1 teaspoon freshly grated nutmeg</p>
<p>1 teaspoon cinnamon</p>
<p>1 teaspoon allspice</p>
<p>1/2 teaspoon cloves</p>
<p>1 15-ounce can pumpkin puree, or just under two cups</p>
<p>1 cup vegetable oil</p>
<p>1/3 cup maple syrup</p>
<p>1/3 cup water</p>
<p>1 cup chopped walnuts</p>
<p>Preheat oven to 350 degrees F.  Place a rack in the center of the oven.  Grease and flour two loaf pans (mine are 8&#215;4x2) and set aside.  </p>
<p>In a large bowl, whisk together flours, sugars, baking soda, baking powder, salt and spices.  </p>
<p>In a medium bowl, carefully whisk together pumpkin puree, oil, maple syrup and water.  </p>
<p>Add the wet ingredients to the dry ingredients and use a spatula to fold all of the ingredients together.  Make sure to scrape the bottom of the bowl well, finding any stray flour bits to mix in.  Fold in most of the chopped walnuts, reserving some to sprinkle on top of the batter once in the pan. </p>
<p>Divide the dough between the two greased pans and sprinkle with a few walnut pieces.  Bake for 1 hour to 1 hour and 15 minutes, or until a skewer inserted in the center comes out clean.  Remove from the oven.  Let rest in the pans for 20 minutes, then invert onto a cooling rack.  </p>
<p>Serve warm.  Maybe even wrap one loaf up in plastic wrap and store in the freezer for future munching.</p>

<p>This recipe is super simple and straight forward.  It&#8217;s bound to put a smile on your face.  The recipe yields 12 silver dollar pancakes&#8230; minis, if you will.  It&#8217;s the perfect little breakfast to throw together for just you, or for you and your sweetie on a dirty old Wednesday morning.  Give it a go!</p>
<p><strong>Vegan Jam Swirled Pancakes</strong></p>
<p><strong> </strong> makes 12 silver dollar pancakes</p>

<p>2 1/2 Tablespoons sunflower or almond oil</p>
<p>1/2 cup soy milk, almond milk, rice milk or water</p>
<p>splash of vanilla extract</p>
<p>1/2 cup all-purpose flour</p>
<p>2 Tablespoons whole wheat flour</p>
<p>1 Tablespoon sugar</p>
<p>1 1/2 teaspoons baking powder</p>
<p>pinch of salt</p>
<p>2 generous spoonfuls of your favorite jam, plus more for topping the pancakes</p>
<p>Preheat oven to 2oo degrees F to keep the pancakes warm once they&#8217;re cooked.</p>
<p>In a small bowl, combine milk or water, oil and vanilla extract.  In a medium sized bowl combine flours, sugar, baking powder and a pinch of salt.  Whisk with a fork to combine.  Add the wet ingredients all at once to the dry ingredients. Stir to combine.  It&#8217;s ok if a few lumps remain in the batter.</p>
<p>Let the batter sit for five or so minutes while the griddle heats up.  Heat 1 Tablespoon of sunflower or almond oil in a cast iron skillet over medium heat.  Once the batter has rested, fold in two generous spoonfuls of your favorite jam, swirling into the batter, and drop generous tablespoonfuls of batter onto heated griddle.  Cook until bubbles form along the edges.  Flip.  Cook until browned.  Add more oil to the pan as needed and cook remaining batter.</p>
<p>Once cooked, place on a plate in the heated oven until ready to serve.  When ready to serve, spread with more jam or top with maple syrup.</p>

<p>Yea, I can see that crazy look of your face.  But it&#8217;s me.  The same person that brought you amazing <a href="http://www.joythebaker.com/blog/2009/06/cream-cheese-cinnamon-rolls/" target="_blank">Cream Cheese Cinnamon Rolls</a> and <a href="http://www.joythebaker.com/blog/2008/01/blueberry/" target="_blank">Perfect Lemon Pound Cake.</a> We trust each other.  We have an understanding.  Just go with me on this.</p>
<p>Something about hot summer weather gets me to thinking (or melts my brain) and brings some strange recipes to the surface.  Remember last year&#8217;s <a href="http://www.joythebaker.com/blog/2008/05/blueberry-sour-cream-ice-cream-with-hot-fudge/" target="_blank">Blueberry Ice Cream with Homemade Hot Fudge</a>?  Yea&#8230; I got a few strange looks for that too.</p>
<p>Because I still see those raised eyebrows on your face, let me tell you a little about this beast of a cake.  Believe me, I was super skeptical too.</p>
<p>The vegan chocolate cake is dense and moist, and everything you might want from a chocolate cake minus the eggs and butter.  The fat in the cake is almond oil (or anything you have on hand) and one whole mashed avocado.  It&#8217;s lovely, and I didn&#8217;t taste a lick of avocado in the cake.</p>
<p>The avocado buttercream is a dash more strange.  Yes, it&#8217;s bright green.  Yes, the only fat in the buttercream is avocado meat.  It&#8217;s sweet with slight hints of citrus.  I had my doubts, but when combined with the chocolate cake&#8230; holy wow!  It actually worked!  It was honest-to-goodness delicious!  Not to mention vegan and full of healthy fats!</p>
<p>Your thoughts?  Have I scared you off?</p>

<p>3 cups all-purpose flour</p>
<p>6 Tablespoons unsweetened cocoa powder</p>
<p>1/2 teaspoon salt</p>
<p>2 teaspoons baking powder</p>
<p>2 teaspoons baking soda</p>
<p>2 cups granulated sugar</p>
<p>1/4 cup vegetable oil (I used almond oil)</p>
<p>1/2 cup soft avocado, well mashed, about 1 medium avocado</p>
<p>2 cups water</p>
<p>2 Tablespoons white vinegar</p>
<p>2 teaspoons vanilla extract</p>
<p>Preheat oven to 350 degrees F.  Grease and flour two 8 or 9-inch rounds.  Set aside.</p>
<p>Sift together all of the dry ingredients except the sugar.  Set that aside too.</p>
<p>Mix all the wet ingredients together in a bowl, including the super mashed avocado.</p>
<p>Add sugar into the wet mix and stir.</p>
<p>Mix the wet with the dry all at once, and beat with a whisk (by hand) until smooth.</p>
<p>Pour batter into a greased cake tins. Bake for 30 to 40 minutes, until a toothpick inserted comes out clean.</p>
<p>Let cakes cool in pan for 15 minutes, then turn out onto cooling racks to cool completely before frosting with avocado buttercream.</p>
<p><strong>Avocado Buttercream Frosting</strong></p>
<p>from Alton Brown</p>
<p>8 ounces of avocado meat, about 2 small to medium, very ripe avocados</p>
<p>2 teaspoons lemon juice</p>
<p>1 pound powdered sugar, sifted</p>
<p>1/2 teaspoon vanilla extract</p>
<p>Peel and pit the soft avocados.  It&#8217;s important to use the ripest avocados you can get your hands on.  If the avocados have brown spots in the meat, avoid those spots when you scoop the meat into the bowl.</p>
<p>Place the avocado meat into the bowl of a stand mixer fit with the whisk attachment.  Add lemon juice and whisk the avocado on medium speed, until slightly lightened in color and smooth, about 2-3 minutes.</p>
<p>Add the powdered sugar a little at a time and beat.  Add vanilla extract until combined.  If not using right away, store in the refrigerator.  Don&#8217;t worry.  It won&#8217;t turn brown!</p>

<p>It&#8217;s about time that I introduce you to some of my friends.</p>

<p>I ventured into Jill&#8217;s kitchen one Sunday afternoon to make her famous vegan cookies.  I&#8217;m not a big vegan cookie baker, and I thought I reach out to an expert.</p>
<p>I met Jill when I hired her at a tiny Los Angeles coffee shop I managed.  We both learned very quickly that Jill is not a morning person and Joy is.  We also learned that Jill thinks Black Widow spiders are cool and Joy runs screaming for the hills at the mere mention of one.  But Joy and Jill share a deep love for, well&#8230; occasional boy talk and fast food tacos.  Joy and Jill are great friends.</p>

<p style="text-align: left;">So what&#8217;s the deal with vegan cookies?  No eggs, no butter, no milk.  None of the regulars that you&#8217;ll usually see on my blog.  Instead, I let Jill introduce me to tofu and vegan margarine in my baking.  I have to say, Jill knows her way around some tofu and I was so pleased with these cookies.  We ate them warm out of the oven with soy milk.  What a good vegan I was for those few hours!</p>

<p style="text-align: left;">1/2 cup vegan margarine (can be found at most grocery stores in the States)</p>
<p style="text-align: left;">1 cup dark brown sugar</p>
<p style="text-align: left;">1/4 cup soft tofu, drained</p>
<p style="text-align: left;">1/2 cup peanut butter</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">1 cup flour</p>
<p style="text-align: left;">1/2 cup cocoa powder ( Ghirardelli is vegan)</p>
<p style="text-align: left;">3/4 teaspoon baking soda</p>
<p style="text-align: left;">scant 1/2 teaspoon salt</p>
<p style="text-align: left;">3/4 teaspoon cinnamon</p>

<p style="text-align: left;">Preheat oven to 350 degrees F.</p>
<p style="text-align: left;">In a bowl combine margarine, brown sugar and tofu until well blended.  Stir until virtually no chunks of tofu remain.  Add the peanut butter and vanilla and stir to combine.</p>
<p style="text-align: left;">In a separate bowl sift together flour, cocoa powder, baking soda, salt and cinnamon.  Add the dry ingredients to the wet and stir to combine.</p>
<p style="text-align: left;">On a parchment or foil lined backing sheet, heap cookie dough by the Tablespoon.  Bake for 12-15 minutes.  Remove from oven, let sit for 5 minutes then enjoy with soy milk!</p>
