Vegan Jam Swirled Pancakes

Some things just shouldn’t be a luxury.  Some things are an absolute necessity.

Spending too much money at Target, for example.  Sometimes… (you know it’s true) that’s a total necessity.

Hot bath plus cold beer.  You need it.  I need it. Necessity.

A super comfortable dress that shows a little shoulder.  Everyone loves a little shoulder.

A girlfriend you can talk about your lady parts with.  Yes, I said lady parts.  Please don’t under estimate this necessity.

Aaaaand, last but not least… a little pancake love on a weekday morning.  Do it.

Vegan Chocolate Avocado Cake

Vegan Chocolate Avocado Cake

Ok… first of all, stop looking at me like that.

Yea, I can see that crazy look of your face.  But it’s me.  The same person that brought you amazing Cream Cheese Cinnamon Rolls and Perfect Lemon Pound Cake. We trust each other.  We have an understanding.  Just go with me on this.

Something about hot summer weather gets me to thinking (or melts my brain) and brings some strange recipes to the surface.  Remember last year’s Blueberry Ice Cream with Homemade Hot Fudge?  Yea… I got a few strange looks for that too.

Because I still see those raised eyebrows on your face, let me tell you a little about this beast of a cake.  Believe me, I was super skeptical too.

The vegan chocolate cake is dense and moist, and everything you might want from a chocolate cake minus the eggs and butter.  The fat in the cake is almond oil (or anything you have on hand) and one whole mashed avocado.  It’s lovely, and I didn’t taste a lick of avocado in the cake.

The avocado buttercream is a dash more strange.  Yes, it’s bright green.  Yes, the only fat in the buttercream is avocado meat.  It’s sweet with slight hints of citrus.  I had my doubts, but when combined with the chocolate cake… holy wow!  It actually worked!  It was honest-to-goodness delicious!  Not to mention vegan and full of healthy fats!

Vegan Cookies with Chocolate, Peanut Butter, and Cinnamon

It’s about time that I introduce you to some of my friends.

Meet Jill. Jill is one fierce cookie, although me might try to fool you with her demure presence and coy smile.  Do not be fooled.  She’s a firecracker and she’s got your number.

I ventured into Jill’s kitchen one Sunday afternoon to make her famous vegan cookies.  I’m not a big vegan cookie baker, and I thought I reach out to an expert.

I met Jill when I hired her at a tiny Los Angeles coffee shop I managed.  We both learned very quickly that Jill is not a morning person and Joy is.  We also learned that Jill thinks Black Widow spiders are cool and Joy runs screaming for the hills at the mere mention of one.  But Joy and Jill share a deep love for, well… occasional boy talk and fast food tacos.  Joy and Jill are great friends.

Homemade Almond Milk

It’s just an ordinary day, except for the fact that I made milk!  Not the yummy stuff that comes from the cow, but Almond Milk with a touch of honey.  It might just give Old Bessie a run for her money.

Let me tell you a little about me.  I’m part Irish, part African American, and A Little Bit of Hippie.  Today we’re only going to discuss the Hippie in me.  My parents raised me on, what seemed at the time to be, the gnarliest health food on the planet.  I remember sitting down to dinners of Tofu Potato Baker (which I did eventually come to love- thank you ketchup), loads of barely-steamed-mostly-raw brocolli, whole wheat fig bars and fresh squeezed carrot juice.  Granted, I love all that stuff now, but what I would have given for some Chips Ahoy and Kentucky Fried Chicken when I was 5.

I make my family’s dinner habits sound like abuse, don’t I?  That’s probably not fair.  In their choices, my parents instilled in me, what I call, A Little Bit Of Hippie.

As a person with A Little Bit of Hippie in her I am prone to do things like enjoy vegan food on Friday night and throw back a medium rare filet on Saturday night.  I also might ride my bike to work, but only twice a week.  It’s also the Little Bit of Hippie in me that lead me down the granola bar path and inspired me to make these Banana Blackberry Smoothies with Homemade Almond Milk.
