<p style="text-align: left; ">This soup is pure and simple.  Green vegetables with a touch of spice and a splash of citrus.  I dolloped my soup with a bit of sour cream because&#8230; seriously?  Yum.  </p>
<p style="text-align: left; ">psssst&#8230; this soup is super filling too! </p>
<p><strong>Broccoli and Arugula Soup</strong></p>
<p><strong>    </strong> adapted from goop.com</p>
<p>     makes enough for two large servings</p>

<p>1 tablespoon olive oil</p>
<p>1 clove of garlic, chopped</p>
<p>1/2 yellow onion, chopped</p>
<p>1 head broccoli, cut into large florets, about 2/3 pound</p>
<p>2 1/2 cups water or vegetable stock</p>
<p>1/4 teaspoon of sea salt and black pepper, or season to taste</p>
<p>1 teaspoon ground cumin</p>
<p>1 cup arugula leaves, packed</p>
<p>squeeze of 1/2 lemon</p>
<p>Heat olive oil in a large saucepan over medium heat.  Add the onions and cook until soft and translucent, about 4 to 5 minutes.  Add the garlic cloves and cook for another minute.  Add the broccoli and cook for about 4 minutes, until the broccoli is bright green in color.  Add the cumin, salt and pepper.  Stir to combine. </p>
<p>Add the water or chicken stock, lower the heat and cover.  Cook for about 8 minutes, until the broccoli has been softened. and is just tender.  </p>
<p>Here&#8217;s the tricky part.  We&#8217;re going to blend the soup.  Working in batches, transfer some of the soup liquid and broccoli to a blender.  Add half of the arugula leaves and blend until smooth.  Transfer to a bowl or another pot while you blend the second batch of soup with the rest of the arugula.  Return to a pot over a low flame, check to see if it needs more salt or pepper.  Throw in the juice of 1/2 a lemon and serve.  </p>
<p>This soup also freezes well!</p>

<p>This recipe is super simple and straight forward.  It&#8217;s bound to put a smile on your face.  The recipe yields 12 silver dollar pancakes&#8230; minis, if you will.  It&#8217;s the perfect little breakfast to throw together for just you, or for you and your sweetie on a dirty old Wednesday morning.  Give it a go!</p>
<p><strong>Vegan Jam Swirled Pancakes</strong></p>
<p><strong> </strong> makes 12 silver dollar pancakes</p>

<p>2 1/2 Tablespoons sunflower or almond oil</p>
<p>1/2 cup soy milk, almond milk, rice milk or water</p>
<p>splash of vanilla extract</p>
<p>1/2 cup all-purpose flour</p>
<p>2 Tablespoons whole wheat flour</p>
<p>1 Tablespoon sugar</p>
<p>1 1/2 teaspoons baking powder</p>
<p>pinch of salt</p>
<p>2 generous spoonfuls of your favorite jam, plus more for topping the pancakes</p>
<p>Preheat oven to 2oo degrees F to keep the pancakes warm once they&#8217;re cooked.</p>
<p>In a small bowl, combine milk or water, oil and vanilla extract.  In a medium sized bowl combine flours, sugar, baking powder and a pinch of salt.  Whisk with a fork to combine.  Add the wet ingredients all at once to the dry ingredients. Stir to combine.  It&#8217;s ok if a few lumps remain in the batter.</p>
<p>Let the batter sit for five or so minutes while the griddle heats up.  Heat 1 Tablespoon of sunflower or almond oil in a cast iron skillet over medium heat.  Once the batter has rested, fold in two generous spoonfuls of your favorite jam, swirling into the batter, and drop generous tablespoonfuls of batter onto heated griddle.  Cook until bubbles form along the edges.  Flip.  Cook until browned.  Add more oil to the pan as needed and cook remaining batter.</p>
<p>Once cooked, place on a plate in the heated oven until ready to serve.  When ready to serve, spread with more jam or top with maple syrup.</p>

<p>Yea, I can see that crazy look of your face.  But it&#8217;s me.  The same person that brought you amazing <a href="http://www.joythebaker.com/blog/2009/06/cream-cheese-cinnamon-rolls/" target="_blank">Cream Cheese Cinnamon Rolls</a> and <a href="http://www.joythebaker.com/blog/2008/01/blueberry/" target="_blank">Perfect Lemon Pound Cake.</a> We trust each other.  We have an understanding.  Just go with me on this.</p>
<p>Something about hot summer weather gets me to thinking (or melts my brain) and brings some strange recipes to the surface.  Remember last year&#8217;s <a href="http://www.joythebaker.com/blog/2008/05/blueberry-sour-cream-ice-cream-with-hot-fudge/" target="_blank">Blueberry Ice Cream with Homemade Hot Fudge</a>?  Yea&#8230; I got a few strange looks for that too.</p>
<p>Because I still see those raised eyebrows on your face, let me tell you a little about this beast of a cake.  Believe me, I was super skeptical too.</p>
<p>The vegan chocolate cake is dense and moist, and everything you might want from a chocolate cake minus the eggs and butter.  The fat in the cake is almond oil (or anything you have on hand) and one whole mashed avocado.  It&#8217;s lovely, and I didn&#8217;t taste a lick of avocado in the cake.</p>
<p>The avocado buttercream is a dash more strange.  Yes, it&#8217;s bright green.  Yes, the only fat in the buttercream is avocado meat.  It&#8217;s sweet with slight hints of citrus.  I had my doubts, but when combined with the chocolate cake&#8230; holy wow!  It actually worked!  It was honest-to-goodness delicious!  Not to mention vegan and full of healthy fats!</p>

<p>3 cups all-purpose flour</p>
<p>6 Tablespoons unsweetened cocoa powder</p>
<p>1/2 teaspoon salt</p>
<p>2 teaspoons baking powder</p>
<p>2 teaspoons baking soda</p>
<p>2 cups granulated sugar</p>
<p>1/4 cup vegetable oil (I used almond oil)</p>
<p>1/2 cup soft avocado, well mashed, about 1 medium avocado</p>
<p>2 cups water</p>
<p>2 Tablespoons white vinegar</p>
<p>2 teaspoons vanilla extract</p>
<p>Preheat oven to 350 degrees F.  Grease and flour two 8 or 9-inch rounds.  Set aside.</p>
<p>Sift together all of the dry ingredients except the sugar.  Set that aside too.</p>
<p>Mix all the wet ingredients together in a bowl, including the super mashed avocado.</p>
<p>Add sugar into the wet mix and stir.</p>
<p>Mix the wet with the dry all at once, and beat with a whisk (by hand) until smooth.</p>
<p>Pour batter into a greased cake tins. Bake for 30 to 40 minutes, until a toothpick inserted comes out clean.</p>
<p>Let cakes cool in pan for 15 minutes, then turn out onto cooling racks to cool completely before frosting with avocado buttercream.</p>
<p><strong>Avocado Buttercream Frosting</strong></p>
<p>from Alton Brown</p>
<p>8 ounces of avocado meat, about 2 small to medium, very ripe avocados</p>
<p>2 teaspoons lemon juice</p>
<p>1 pound powdered sugar, sifted</p>
<p>1/2 teaspoon vanilla extract</p>
<p>Peel and pit the soft avocados.  It&#8217;s important to use the ripest avocados you can get your hands on.  If the avocados have brown spots in the meat, avoid those spots when you scoop the meat into the bowl.</p>
<p>Place the avocado meat into the bowl of a stand mixer fit with the whisk attachment.  Add lemon juice and whisk the avocado on medium speed, until slightly lightened in color and smooth, about 2-3 minutes.</p>
<p>Add the powdered sugar a little at a time and beat.  Add vanilla extract until combined.  If not using right away, store in the refrigerator.  Don&#8217;t worry.  It won&#8217;t turn brown!</p>

<p>It&#8217;s about time that I introduce you to some of my friends.</p>

<p>I ventured into Jill&#8217;s kitchen one Sunday afternoon to make her famous vegan cookies.  I&#8217;m not a big vegan cookie baker, and I thought I reach out to an expert.</p>
<p>I met Jill when I hired her at a tiny Los Angeles coffee shop I managed.  We both learned very quickly that Jill is not a morning person and Joy is.  We also learned that Jill thinks Black Widow spiders are cool and Joy runs screaming for the hills at the mere mention of one.  But Joy and Jill share a deep love for, well&#8230; occasional boy talk and fast food tacos.  Joy and Jill are great friends.</p>

<p style="text-align: left;">So what&#8217;s the deal with vegan cookies?  No eggs, no butter, no milk.  None of the regulars that you&#8217;ll usually see on my blog.  Instead, I let Jill introduce me to tofu and vegan margarine in my baking.  I have to say, Jill knows her way around some tofu and I was so pleased with these cookies.  We ate them warm out of the oven with soy milk.  What a good vegan I was for those few hours!</p>

<p style="text-align: left;">1 cup dark brown sugar</p>
<p style="text-align: left;">1/4 cup soft tofu, drained</p>
<p style="text-align: left;">1/2 cup peanut butter</p>
<p style="text-align: left;">1 teaspoon vanilla extract</p>
<p style="text-align: left;">1 cup flour</p>
<p style="text-align: left;">1/2 cup cocoa powder ( Ghirardelli is vegan)</p>
<p style="text-align: left;">3/4 teaspoon baking soda</p>
<p style="text-align: left;">scant 1/2 teaspoon salt</p>
<p style="text-align: left;">3/4 teaspoon cinnamon</p>

<p style="text-align: left;">Preheat oven to 350 degrees F.</p>
<p style="text-align: left;">In a bowl combine margarine, brown sugar and tofu until well blended.  Stir until virtually no chunks of tofu remain.  Add the peanut butter and vanilla and stir to combine.</p>
<p style="text-align: left;">In a separate bowl sift together flour, cocoa powder, baking soda, salt and cinnamon.  Add the dry ingredients to the wet and stir to combine.</p>
<p style="text-align: left;">On a parchment or foil lined backing sheet, heap cookie dough by the Tablespoon.  Bake for 12-15 minutes.  Remove from oven, let sit for 5 minutes then enjoy with soy milk!</p>

<p>It&#8217;s just an ordinary day, except for the fact that I made milk!  Not the yummy stuff that comes from the cow, but Almond Milk with a touch of honey.  It might just give Old Bessie a run for her money.</p>
<p>Let me tell you a little about me.  I&#8217;m part Irish, part African American, and A Little Bit of Hippie.  Today we&#8217;re only going to discuss the Hippie in me.  My parents raised me on, what seemed at the time to be, the gnarliest health food on the planet.  I remember sitting down to dinners of Tofu Potato Baker (which I did eventually come to love- thank you ketchup), loads of barely-steamed-mostly-raw brocolli, whole wheat fig bars and fresh squeezed carrot juice.  Granted, I love all that stuff now, but what I would have given for some Chips Ahoy and Kentucky Fried Chicken when I was 5.</p>
<p>I make my family&#8217;s dinner habits sound like abuse, don&#8217;t I?  That&#8217;s probably not fair.  In their choices, my parents instilled in me, what I call, A Little Bit Of Hippie.</p>
<p>As a person with A Little Bit of Hippie in her I am prone to do things like enjoy vegan food on Friday night and throw back a medium rare filet on Saturday night.  I also might ride my bike to work, but only twice a week.  It&#8217;s also the Little Bit of Hippie in me that lead me down the <a href="http://www.joythebaker.com/blog/?s=granola+bar">granola bar</a> path and inspired me to make these Banana Blackberry Smoothies with Homemade Almond Milk.</p>

<p>I think we all should have at A Little Bit of Hippie in us.  Maybe the the world would be more full of peace, love and Homemade Almond Milk</p>
<p>The milk is SO easy to make.  It tastes light, but full of almondy flavor.  Give it a go!  I love it in smoothies and on granola.</p>
<p><strong>Almond Milk</strong></p>

<p>1.  Place 1 cup toasted almonds in a glass jar, or clean container with a lid.</p>
<p>2.  Cover almond with 4 cups filtered water.</p>

<p>3.  Tightly close the jar or place the lid on the container.</p>
<p>4.  Refrigerate for 1 day, 2 days at the very most.</p>

<p style="text-align: left;">5.  I know the picture isn&#8217;t all that charming, but pour the almonds and water into a blender and blend until relatively smooth.  It will never smooth completely, but blend on and off for about 1 minute and 30 seconds.  (During this step I added 1 Tablespoon Honey to the almond milk.)</p>

<p style="text-align: left;">6.  Drape a cheesecloth over a medium sized bowl and place a fine mesh strainer on top.  Pour the contents of the blender into the strainer.  Gather all four corners of the cheesecloth and slowly lift and squeeze the liquid from the cloth.</p>
<p style="text-align: left;">7.  You&#8217;re left with almond milk and almond pulp.  Discard the pulp, or think of something extra hippie to do with it.  The milk- drink it.</p>

<p style="text-align: left;">1 ripe banana</p>
<p style="text-align: left;">6 blackberries</p>
<p style="text-align: left;">3/4 cup almond milk</p>
<p style="text-align: left;">1/2 cup plain yogurt</p>
